The Ingredients need to make Kerala Style Kadala Curry:
- Prepare 1/4 kg of Big Brown Chana / chickpeas
- It’s 10-12 of Sambar Onions
- Prepare 2-3 of Green Chillies
- You need 1 cup of Coriander Leaves
- It’s 1 Sprig of Curry Leaves
- Prepare 1 tbsp of Ginger Garlic Paste
- Prepare 1 of Ginger
- You need 2-3 cloves of Garlic
- It’s 2 of Tomatoes
- Prepare 1/2 tsp of Mustard Seeds
- Prepare 1/2 tsp of Cumin Seeds
- Prepare 1/2 tsp of Fennel Seeds
- You need as needed of Few whole Peppercorns
- Prepare 3 of Cardamons
- Prepare 1 of Cinnamon Stick
- Prepare 3 of Cloves
- You need 1 of Bay Leaf
- It’s 1 pinch of Asafoetida
- You need 1/4 tsp of Turmeric Powder
- Prepare 1/2 tsp of Cumin Powder
- Prepare 1/2 tsp of Pepper Powder
- You need 1/2 tsp of Fennel Seeds Powder
- Prepare 2 tsp of Garam Masala
- It’s 2 tsp of Chilli Powder
- It’s 3 tsp of Coriander Powder
- You need of As required Salt
- Prepare of As required Oil for Cooking
- Prepare of As required Water for Cooking
- You need 1 tbsp of Butter (For Garnish)
- You need 1/2 tsp of Lemon Juice (For Garnish)
Step to make Kerala Style Kadala Curry:
- Soak chana in water overnight.
- Next morning, In a Cooker, add soaked chana with water, turmeric powder, chilli powder, coriander powder, pepper powder, cumin powder, fennel seeds powder, garam masala and salt. In Futura Cooker, whistle doesnt blow. So first on high then on low for 20 min
- Step 1In a chopper, chop finely, onions, green chillies, curry leaves, ginger, garlic and coriander leave Keep it aside.
- Step 2 In a chopper, again chop finely, tomatoes and coriander leave Keep it aside.
- Heat oil butter. Add mustard seeds, asafoetida, cumin seeds, fennel seeds, whole pepper, cardamoms, cinnamon, cloves and bay leaf.
- Add (Step 1) and saute well. Add 1 tbsp ginger garlic paste and saute nicely.
- Add (Step 2) and saute till oil appears at the surface.
- Add only the cooked chana and daute for sometime. Then add the chana gravy anf let it come to a boil. Put the flame on low cover cook till chana is coated with the masala.
- Off the flame. Garnish with coriander leaves, green chillies, lemon juice and butter
