The Ingredients need to make Kerala Style Baingan Dal Curry:
  1. It’s 5 of brinjals cut into small pieces
  2. It’s 1 cup of Toor Dal
  3. It’s 5 of dried red chillies
  4. Prepare 4 tablespoons of Turmeric powder
  5. Prepare 2 tablespoons of Red chilli powder
  6. Prepare 5 of curry leaves
  7. You need 1 teaspoon of Urad Dal
  8. It’s 2 teaspoons of Mustard seeds
  9. It’s 1/2 of coconut desiccated
  10. Prepare as required of Coconut oil
  11. It’s As per taste of Crystal salt
  12. Prepare as required of Water

Step to make Kerala Style Baingan Dal Curry:
  1. Wash the Brinjals in water with a pinch of turmeric powder and keep aside.

  6. Meanwhile, take the desiccated coconut and put it in a blender.
  7. Blend it until a thick coarse paste is formed.
  8. Now add the coconut paste to the cooking vessel. Stir well.
  9. In another pan, pour four teaspoons of coconut oil. When it is heated, add dried red chillies, curry leaves, mustard and urad Dal.
  10. Now add this to the curry.
  11. Stir the curry well. Your special Baingan Dal Curry in Kerala style is ready!! It’s usually served hot along with White rice.
