The Ingredients need to make Mutton yakhni pulao:
  1. You need of Yakhni/ Stock
  2. Prepare 500 gm of Mutton
  3. You need 4-5 of Green Cardamom
  4. You need 2 of Black Cardamom
  5. Prepare of Cumin seeds 1 tspn
  6. It’s of Black Pepper Corn 1 tspn
  7. You need 1 tsp of Coriander seeds
  8. You need 2 of small Bay Leaf
  9. Prepare Cloves of a few
  10. You need 1 inch of piece of ginger
  11. You need 5 of – 6 cloves Garlic
  12. Prepare 2 of dried red chili
  13. It’s 1 of medium onion (sliced)
  14. Prepare 2 of – 3 tbsp oil
  15. Prepare to taste of Salt
  16. Prepare of Rice
  17. You need of Rice 3 cups (soaked for 30 minutes)
  18. Prepare of Yakhni/ broth 3 cups/glass
  19. Prepare 2 1/2 cups of Water
  20. It’s 1 tsp of Cumin seeds
  21. It’s 1 tsp of ginger garlic paste
  22. Prepare 4-6 of Green chilli
  23. It’s of Yoghurt 1tblspn
  24. It’s of Garam masala half tsp
  25. Prepare 4-5 of Black Pepper
  26. Prepare 5-6 of Potatoes

  1. For yakhni first

  3. Strain the stock with a large strainer in another large bowl. separate meat pieces
  4. Hand press all strained spices to release their juices in the yakhni/ broth. Discard them.
  5. Yakhni is ready. It should be 2-3 glasses
  6. For rice
  7. Saute onions until golden. Add ginger garlic paste and cumin seeds and sauté.add potatoes as well
  8. Add the mutton, yoghurt, green chilli and masalas and saute fr 1 minute.
  9. Add the broth and Adjust salt. Add the drained rice and cook until water is dried out.
  10. Close the lid and let rice steam(put on dum) for 15 minutes on low flame. Once done- fluff the rice with a flat spoon and serve! Enjoy!
