The Ingredients need to make Moti Pulao:
- Prepare of Moti (Mutton Mince Balls) -
- You need 1 cup of mutton keema / mince
- You need 2 tbsp. of fried onion
- Prepare 2 tbsp. of fried onion
- You need 2 tbsp. of roasted chickpea flour
- Prepare to taste of salt
- You need 1 tsp. of ginger-garlic paste
- Prepare 1/2 cup of coriander mint leaves, chopped
- You need 1 tbsp. of coriander-cumin powder
- It’s 1 tsp. of red chilli powder
- You need 1-2 of green chilies, chopped
- It’s 1/4 tsp. of pepper powder
- You need 1/4 tsp. of pepper powder
- Prepare 1 tsp. of kasuri methi, crushed
- You need 1 tbsp. of raw papaya, grated / paste
- You need 1/2 cup of yoghurt
- Prepare as needed of oil to deep fry
- It’s of Pulao -
- You need 1 cup of Basmati rice, soaked for 30 minutes
- You need 2 of green cardamoms
- Prepare 2 tbsp. of ghee
- You need 1 tsp. of shahjeera
- Prepare 1 inch of cinnamon stick
- It’s 2 of green cardamoms
- It’s 2-3 of green chilies, slit
- You need 4 of cloves
- Prepare 2 of bay leaves
- Prepare to taste of salt
- You need 1/2 of javitri
- Prepare 1 of onion, sliced
- Prepare 1 tbsp. of ginger-garlic paste
- It’s 1 tbsp. of fried onion
- It’s 2-3 of green chilies, slit
- It’s to taste of salt
- You need 1 tsp. of kewra water
- It’s 1 tsp. of coriander leaves, chopped
- Prepare 1 tbsp. of fried onion
Step to make Moti Pulao:
- Moti - In a bowl, combine all the above mentioned ingredients (except oil). Divide into small equal size ball
- Heat oil in a pan and deep fry them till light golden in colour. Drain on a kitchen towel and keep aside.
- Pulao - Heat ghee in a pan and temper with bay leaves, cinnamon, cardamom, cloves, javitri and shahjeera. Saute for a few second
- Add the onion and stir fry till light brown. Add the ginger-garlic paste and the green chilie Saute for a minute more.
- Add the rice and continue to saute for 2-3 minute Add 1 1/2 cups hot water, kewra water and salt. Give it a stir and arrange the moti over it.
- Pressure cook for 4-5 minutes on a low flame after the first whistle. When done, fluff it up with a fork and garnish with coriander leaves and fried onion. Serve with raita for a sumptuous meal. Happy Cooking !!!
