The Ingredients need to make Moti Pulao:
  1. Prepare of Moti (Mutton Mince Balls) -
  2. You need 1 cup of mutton keema / mince
  3. You need 2 tbsp. of fried onion
  4. Prepare 2 tbsp. of fried onion
  5. You need 2 tbsp. of roasted chickpea flour
  6. Prepare to taste of salt
  7. You need 1 tsp. of ginger-garlic paste
  8. Prepare 1/2 cup of coriander mint leaves, chopped
  9. You need 1 tbsp. of coriander-cumin powder
  10. It’s 1 tsp. of red chilli powder
  11. You need 1-2 of green chilies, chopped
  12. It’s 1/4 tsp. of pepper powder
  13. You need 1/4 tsp. of pepper powder
  14. Prepare 1 tsp. of kasuri methi, crushed
  15. You need 1 tbsp. of raw papaya, grated / paste
  16. You need 1/2 cup of yoghurt
  17. Prepare as needed of oil to deep fry
  18. It’s of Pulao -
  19. You need 1 cup of Basmati rice, soaked for 30 minutes
  20. You need 2 of green cardamoms
  21. Prepare 2 tbsp. of ghee
  22. You need 1 tsp. of shahjeera
  23. Prepare 1 inch of cinnamon stick
  24. It’s 2 of green cardamoms
  25. It’s 2-3 of green chilies, slit
  26. You need 4 of cloves
  27. Prepare 2 of bay leaves
  28. Prepare to taste of salt
  29. You need 1/2 of javitri
  30. Prepare 1 of onion, sliced
  31. Prepare 1 tbsp. of ginger-garlic paste
  32. It’s 1 tbsp. of fried onion
  33. It’s 2-3 of green chilies, slit
  34. It’s to taste of salt
  35. You need 1 tsp. of kewra water
  36. It’s 1 tsp. of coriander leaves, chopped
  37. Prepare 1 tbsp. of fried onion
Step to make Moti Pulao:
  1. Moti - In a bowl, combine all the above mentioned ingredients (except oil). Divide into small equal size ball
  2. Heat oil in a pan and deep fry them till light golden in colour. Drain on a kitchen towel and keep aside.
  3. Pulao - Heat ghee in a pan and temper with bay leaves, cinnamon, cardamom, cloves, javitri and shahjeera. Saute for a few second
  4. Add the onion and stir fry till light brown. Add the ginger-garlic paste and the green chilie Saute for a minute more.
  5. Add the rice and continue to saute for 2-3 minute Add 1 1/2 cups hot water, kewra water and salt. Give it a stir and arrange the moti over it.
  6. Pressure cook for 4-5 minutes on a low flame after the first whistle. When done, fluff it up with a fork and garnish with coriander leaves and fried onion. Serve with raita for a sumptuous meal. Happy Cooking !!!
