The Ingredients needed to make Jackfruit Pulao:
  1. You need 300-400 gms of raw jackfruit, cut into small cubes
  2. You need 1 1/2 cups of Basmati rice, soaked for 30 minutes
  3. Prepare 2 tbsp. of oil
  4. You need 2 tbsp. of ghee
  5. It’s 1 tsp. of cumin seeds
  6. Prepare 2 of bay leaves
  7. It’s 1 inch of cinnamon stick
  8. You need 2-3 of green cardamoms
  9. It’s 4-5 of cloves
  10. Prepare 1 of onion, sliced
  11. You need 1 tsp. of ginger-garlic paste
  12. Prepare 1/2 tsp. of turmeric powder
  13. You need to taste of salt
  14. It’s 1 tbsp. of coriander-cumin powder
  15. Prepare 1 tsp. of garam masala powder
  16. It’s pinch of nutmeg powder
  17. It’s 1 tbsp. of red chilli powder
  18. Prepare 1 of tomato, chopped
  19. Prepare 2-3 tbsp. of yoghurt
  20. It’s 1 cup of coriander-mint leaves, chopped
  21. Prepare 8-10 of almonds
  22. It’s 2-3 of green chilies
  23. Prepare 2 cups of hot water
  24. Prepare as needed of chopped almond, mint, dry rose petals, pomegranate pearls and fried onions (opt)
Step to make Jackfruit Pulao:
  1. Boil or pressure cook the raw jackfruit cubes till soft, but al dente. Heat 1 tbsp. oil in a pan and saute the jackfruit till it turns slightly brown in colour. Keep aside.
  2. Heat remaining oil ghee and temper with bay leaves, whole garam masala and cumin seed Saute for a few second
  3. Add the onion and stir fry till light brown. Add the ginger-garlic paste all the dry spices mixed with some Saute till the oil separate
  4. Add the chopped tomatoes and continue to saute till it is mashed. Add the yoghurt, followed by the chopped green Saute till almost dry.
  5. Add the fried jackfruit, soaked rice and almond
  6. Mix everything well and add 2 cups hot water along with the green chilie Give it a stir and pressure cook for 2 whistle
  7. Let the pressure release by itself. Then fluff it up with a fork.
  8. Garnish with all the garnishings as mentioned above and serve with raita and salad for a sumptuous meal.
