The Ingredients needed to make Veg Pulao:
  1. Prepare 3 tbsp of ghee / clarified butter
  2. You need 2 of bay leaf / tej patta
  3. Prepare 2 inch of cinnamon stick / dalchini
  4. It’s 1 of star anise
  5. You need 5 of cloves/ lavang
  6. You need 4 of cardamom / elaichi
  7. Prepare 1/2 tsp of Pepper
  8. It’s 1/2 tsp of cumin seeds / jeera
  9. Prepare 1 of medium onion, finely chopped
  10. You need 1 tsp of ginger - garlic paste
  11. It’s 5 of beans, chopped
  12. You need 10 of florets gobhi / cauliflower
  13. Prepare 1/4 cup of peas / mattar
  14. You need 1 of carrot, chopped
  15. You need 1 of potato, cubed
  16. Prepare 3 of mushrooms, sliced
  17. You need 1 cup of curd / yogurt
  18. Prepare 1/2 tsp of turmeric / haldi
  19. Prepare 1 tsp of kashmiri chilli powder / lal mirch powder
  20. It’s 1/4 tsp of cumin powder / jeera powder
  21. It’s 2 tsp of biryani masala
  22. It’s to taste of salt
  23. Prepare 6 tbsp of coriander leaves, finely chopped
  24. Prepare 20 of mint / pudina leaves, roughly chopped
  25. Prepare 6 tbsp of onions, fried
  26. You need 1 1/2 cups of basmati rice, soaked 30 minutes
  27. It’s 2 tbsp of saffron water
  28. You need 2 cups of water
Step to make Veg Pulao:
  1. Firstly, in a large cooker heat ghee and saute spice further, saute onions and ginger - garlic paste well. additionally, add in mixed vegetables and saute till all vegetables shrink
  2. Now add in curd keeping flame on low. also add in spice powder and salt to taste. mix well. also add in coriander leaves, mint leaves and fried onion spread soaked basmati rice. further sprinkle biryani masala powder and salt.
  3. Also place in coriander leaves, mint and fried onion additionally, pour in saffron water and ghee. pour water and simmer for 25 minute finally, serve veg biryani prepared in cooker along with raita.
