The Ingredients need to make Cauliflower Fried Rice:
  1. Prepare 12 oz of cauliflower florets, riced
  2. Prepare 2 T of rice bran oil
  3. You need 2 of eggs, slightly beaten
  4. Prepare 2 of scallions, thinly sliced
  5. It’s 1 T of grated fresh ginger
  6. You need 1 of celery, diced
  7. You need 1 of red bell pepper, diced
  8. It’s 2 of carrots, diced
  9. You need 12 oz of peas
  10. It’s 1/2 c of corn
  11. You need 1/2 c of low-sodium chicken stock
  12. You need 1 T of low-sodium soy sauce
  13. It’s of few drops sesame oil
  14. It’s 2 T of fresh chopped cilantro
  15. You need 2 T of toasted sesame seeds
Step to make Cauliflower Fried Rice:
  1. In large pot, heat 1 T oil. Add eggs and cook. Cut into strips and transfer to plate, set aside.
  2. In same pot, heat 1 T oil and add scallions, ginger, celery, pepper and carrot Stir-fry until carrots are tender.
  3. Add peas, corn, cauliflower, stock, soy sauce and sesame oil. Stir-fry until cauliflower is soft.
  4. Remove pot from heat and fold in eggs, cilantro and sesame seed
