The Ingredients need to make Mexican Bell Peppers:
  1. Prepare For of Mexican Rice
  2. It’s 1 1/2 cup of Plain Rice (cooked in prior)
  3. Prepare 1 of Green Bell Pepper, large
  4. It’s 1 cup of American Corn
  5. It’s 2 of Tomatoes, large
  6. You need 2 of Onions, medium
  7. Prepare 2 tbsp of Garlic, chopped
  8. You need 1/2 cup of Raw Tomato Puree(blenched in a mixer jar)
  9. You need 1 cup of Beans(white/black)
  10. You need 2 tbsp of Oil
  11. Prepare 2 tbsp of Oregano
  12. You need 2 tbsp of Mexican Masala Mix
  13. You need 2 tbsp of Peri Peri Mix (available in market)
  14. You need 1 tsp of Pepper Powder
  15. It’s 2 tsp of Cumin Powder
  16. Prepare 1 pinch of Salt
  17. It’s 1/2 cup of Mexican Cheese
  18. You need 1/2 cup of Processed Cheese
  19. It’s 8-10 of large Bell Peppers to Serve
  20. Prepare For of Mexican Masala Mix
  21. You need 1 1/2 tbsp of Cumin Seeds
  22. Prepare 3/4 tbsp of Coriander Seeds
  23. You need 1 tbsp of Oregano
  24. Prepare 1 tbsp of Red Chilli Powder
  25. It’s 1 pinch of Salt
Step to make Mexican Bell Peppers:
  1. Finely chop green bell peppers, onions and tomatoe Garlic paste, boiled beans (black/white), tomato puree, keep everything ready.
  2. In a kadhai heat oil on medium-low flame.
  3. Add chopped garlic and saute.
  4. Add onions and saute for 2 minute Do not over cook.
  5. Add fresh American corn, and saute for 2-3 minute (Do not use boiled corn, theyll become chewy)
  6. Add green bell peppers and saute for 1 minute.
  7. Add sliced tomatoes and saute for 2 minute
  8. Add beans and tomato puree and saute for 3-4 minute (Here I had soaked the beans, boiled in a presure cooker and cooked them into tomato puree. Refrigerated for instant use.) (If youre using fresh boiled beans and tomato puree youll have to cook them for few more minutes)
  9. Add cumin powder, salt, mexican masala, pepper powder and Peri Peri mix.
  10. And boiled rice and oregano. (Boil your rice 5-6 hours before and keep it in refrigerator, this helps rice to retain the shape and texture.)
  11. Add Mexican cheese and processed cheese, mix well. Your Mexican rice stuffing is ready.
  12. Take bell peppers of your choice and put them in a pre heated oven at 200° C for 8 minute This will help bell peppers to cook and get that burnt taste and texture.
  13. Stuff bell peppers with Mexican rice stuffing.
  14. Sprinkle some processed cheese and seasoning
  15. Put them on middle rack in a pre heated oven at 200°C and bake for 8-10 minutes using the upper rack only.
  16. Mexican Bell Peppers are ready to serve. Enjoy with tomato ketchup, any sauce or dips of your choice.
