The Ingredients need to make Mutton Dalcha - Hyderabadi style:
  1. You need 300 gm of mutton on bones, washed and drained
  2. You need 1/2 cup of chana dal, soaked for 30 minutes
  3. You need 2 tbsp. of oil
  4. It’s 1 tsp. of shah jeera
  5. Prepare 1 inch of cinnamon stick
  6. You need 3-4 of green cardamoms
  7. You need 5-6 of cloves
  8. It’s 2 of bay leaves
  9. It’s 1/2 of of a medium size bottle gourd, chopped
  10. It’s 1 tbsp. of ghee
  11. It’s 2 of long eggplants, chopped
  12. Prepare 1 tsp. of mustard seeds
  13. Prepare 1 of potato, chopped
  14. You need 1-2 sprigs of curry leaves
  15. You need 1 of onion, chopped
  16. It’s 1 tsp. of red chilli powder
  17. Prepare 1 tbsp. of ginger-garlic paste
  18. It’s as needed of coriander leaves, sliced lemon fresh chilli to garnish (opt)
  19. You need 1 of tomato, chopped
  20. Prepare 1 tsp. of turmeric powder
  21. You need 1-2 tbsp. of red chilli powder
  22. Prepare 1 tbsp. of roasted coriander-cumin powder
  23. You need 1 tsp. of garam masala powder
  24. It’s to taste of salt
Step to make Mutton Dalcha - Hyderabadi style:
  1. Heat oil in a pan and temper with shah jeera, cinnamon, bay leaves, cardamoms and clove Saute for a few second Add onion and fry on a low flame till light brown.
  2. Add ginger-garlic paste, turmeric powder, coriander-cumin powder, garam masala powder and red chilli powder mixed with 1/2 cup Saute till oil separates from the sides of the pan.
  3. Add chopped tomatoes and continue to fry till mashed well.
  4. Add the mutton and salt. Fry on low flame till dry.
  5. Add the soaked dal, chopped potato, bottle gourd and eggplant
  6. Add 2 cups water tamarind Pressure cook for 25 minutes on a low flame after the first whistle.
  7. Heat ghee in a pan and temper with mustard seeds and curry leave Add red chilli powder and switch off the flame.
  8. Pour the tempering over the Mutton Dalcha. Garnish with coriander leaves, sliced lemon and fresh chilli. Serve with Kuska Biryani for an exotic restaurant style meal.
