The Ingredients need to make Prawn Pulao:
  1. It’s 1 cup of Basmati rice, soaked in water for 30 minutes
  2. You need 250 of gm prawns, deveined cleaned
  3. It’s 1 of potato, cubed
  4. You need 2 tbsp. of oil
  5. You need 2 tbsp. of ghee or as preferred
  6. You need 2-3 of bay leaves
  7. Prepare 2 of cinnamon stick
  8. Prepare 3-4 of green cardamoms
  9. You need 6-7 of cloves
  10. Prepare 2 of star anise
  11. Prepare 2 of pathar ke phool
  12. Prepare 1 of onion, sliced
  13. Prepare 1 tbsp. of garlic, sliced
  14. Prepare 1 tbsp. of ginger, sliced
  15. It’s 3-4 of green chilies, slit
  16. Prepare 1 cup of milk
  17. You need 1/2 cup of water
  18. Prepare 1 pinch of saffron
  19. It’s to taste of salt
  20. Prepare 1 tsp. of turmeric powder
  21. Prepare 1 tsp. of garam masala powder
  22. It’s 2 tbsp. of fried onions
  23. Prepare 1 tsp. of coriander powder
  24. It’s handful of coriander-mint leaves
  25. You need 1 tsp. of cumin powder
  26. You need 1 tsp. of red chili powder
Step to make Prawn Pulao:
  1. Soak the saffron in the milk and keep aside. Marinate the potatoes prawns separately with a pinch of salt and turmeric powder for 10 minute
  2. Add the ghee to the pan and temper with cinnamon, cardamoms, cloves, bay leaves, star anise and pathar ke phool.
  3. Saute for a few seconds and then add the onions, garlic, ginger and green chilie Fry on a medium flame till light brown.
  4. Now add all the dry spices (except salt) and saute well.
  5. Add the rice and continue to stir fry for 2 minute
  6. Then add the fried potatoes, fried prawns, saffron milk, water, fried onions, salt and chopped coriander-mint leave Pressure cook for 2 whistle When it cools down a little, fluff it up with a fork.
  7. Serve with raita.
