The Ingredients needed to make Kerala / Nadan Chicken Roast:
  1. It’s 500 gm of Chicken
  2. Prepare of For Marination
  3. Prepare 3 tbsp of Curd
  4. You need 1 tsp of Red Chilli powder
  5. Prepare 1/2 tsp of Turmeric
  6. Prepare to taste of Salt
  7. You need of For gravy
  8. You need 4 of Onions thinly sliced
  9. Prepare 2 of Tomatoes chopped
  10. Prepare 2 of Green Chillies slit
  11. You need 2 sprig of Curry Leaves
  12. You need 1 tbsp of Ginger garlic paste
  13. You need 2 tsp of Coriander powder
  14. You need 2 tsp of Red Chilli powder
  15. Prepare 1 tsp of Fennel powder
  16. It’s 1 tsp of Chicken masala or garam masala
  17. You need 2 Tbsp of Coriander leaves
  18. It’s 4-6 tbsp of Coconut oil
Step to make Kerala / Nadan Chicken Roast:
  1. Marinate chicken with salt,curd turmeric and red chilli powder. keep it aside for 2 hours
  2. Heat 2-4 tbsp oil in earthen vessel, add onion, green chilies
  3. Add little salt and curry leaves
  4. Saute until onions are completely soft and medium browned
  5. Add ginger garlic paste and saute until raw aroma goes away
  6. Add spice powders and mix well
  7. Add chopped tomatoes and saute until mushy
  8. Add coriander leaves and marinated chicken. mix well
  9. Cover and cook, stirring occasionally until cooked.
  10. Increase the heat, Water should completely evaporate
  11. Add 2 tbsp oil and further dry roast or leave it slightly moi Serve hot with Rice, Pathri or Parottas
