The Ingredients need to make Roasted Butternut Squash Soup:
  1. Prepare 2 kg of Butter squash, peeled and de-seeded
  2. It’s 250 g of onion
  3. Prepare 5 tbsp of vegetable oil
  4. Prepare 2 cloves of finely chopped garlic
  5. It’s 10 of back rashes of bacon in small pieces
  6. Prepare of Vegetable stock
  7. Prepare to taste of Salt and black pepper
  8. Prepare of Cooking cream or thick natural yoghurt as required
Step to make Roasted Butternut Squash Soup:
  1. Here are the ingredients
  2. Cut the squash into thick pieces, place on a lightly oiled baking sheet and roast for 25 minutes in a hot oven until the flesh is soft and golden brown
  3. Sweat the onions and garlic in the oil without colouring for 5 minutes
  4. Add the bacon and cook it till brown
  5. Add the roasted squash, pour in the stock and bring to boil. Simmer for 20 minutes
  6. Allow to cool before blending. Blend it till smooth, reheat over a low medium heat, season lightly, add the cooking cream
  7. Serve it while hot as an appetizer
