The Ingredients need to make Special Lunch : Choley, Bhature, Boondi Onion Raita:
- Prepare of (Ingredients For Choley)-
- It’s 1 cup of chickpeas (choley) soaked overnight, boiled
- It’s 3 tbsp of oil
- Prepare 1 of bay leaf
- Prepare 1 of black cardamom
- It’s 1 inch of cinnamon stick
- You need 1/2 tsp of cumin seed
- It’s 1 of onion, paste
- It’s 2 tsp of ginger+ garlic paste
- It’s 2 of tomatoes, paste
- Prepare 1 tbsp of kashmiri Red chilli powder
- You need 1/2 tsp of turmeric powder
- You need 1 tsp of Coriander powder
- Prepare 3/4 tsp of aamchur powder
- You need 1/2 tsp of garam masala
- It’s to taste of Salt
- Prepare 2 cup of water
- Prepare 2 tbsp of Coriander leaves
- You need of (Ingredients for bhatura)-
- It’s 2 cup of maida /all purpose flour
- Prepare 1 tbsp of Rava/ Semolina
- It’s 1 tsp of sugar
- Prepare to taste of Salt
- Prepare 1/2 tsp of baking powder
- Prepare 1/4 tsp of baking soda
- It’s 2 tsp of oil
- It’s 1 cup of curd
- You need As needed of Oil for deep frying
- You need As needed of Maida / Plain flour for dusting
- Prepare of (For boondi Raita)-
- You need 1 cup of curd
- Prepare 2 tbsp of boondi soaked in a water for 5-6 minutes
- Prepare 1 tbsp of onion chopped
- It’s 2 tsp of Coriander leaves chopped
- Prepare 1/2 tsp of Red chilli powder
- You need 1/2 tsp of cumin powder
- Prepare 1 pinch of chaat masala
- It’s to taste of Salt
Step to make Special Lunch : Choley, Bhature, Boondi Onion Raita:
- Choley- Firstly, heat oil in a cooker, saute bay leaf, cardamom and cumin seed Add onion and ginger garlic paste saute till it turns golden brown.
- Add tomato paste and saute till they strt releasing oil.
- Add all the spices mix well, cook for 1-2 minute
- Add boiled chickpeas and 2 cup water give a good mix.
- Pressure cook for 2-3 whistle on medium flame.
- Allow the pressure to release by itself sprinkle Coriander leave Ready
- (Bhatura)- Firstly, in a large mixing bowl take maida, rava, sugar, salt, baking powder and baking soda mix well.
- Add oil rub with flour, also add curd and start to knead dough.
- Grease the dough with oil, cover and rest for 2 hour
- Make balls between your palm.
- Roll dough evenly into circles using rolling pin.
- Heat oil in a deep frying pan or kadhai.
- Drop bhatura into hot oil and press with the spoon to puff up.
- Flip and fry the. Bhatura till golden.
- Then drain the bhatura into tissue paper to remove excess oil.
- Finally Serve Bhature with choley, boondi Raita pickle.
- (For boondi Raita)- Take a bowl whisk curd add salt, cumin powder, red chilli powder and add soaked boondi, onion, coriander leaves mix well sprinkle little chaat masala Ready.
