The Ingredients needed to make South Indian meal:
- You need of For oats idli–
- You need 1 cup of oats (roasted and blended)
- It’s 1/2 cup of semolina (suji)
- It’s 1 cup of curd
- You need 1 tsp of chanadal
- Prepare 1 tsp of urad dal
- Prepare leaves of Few coriander
- You need 2 tbsp of oil
- You need 1/2 tsp of baking soda (optional)
- You need 7-8 of cashews
- Prepare to taste of Salt
- It’s 1/2 tsp of cumin seeds
- You need 1/2 tsp of mustard seeds
- It’s as needed of Water
- It’s of for thakkali kurma—
- It’s 2 of tomatoes (finely chopped)
- Prepare 1 cup of coconut milk
- Prepare 2 of green chillies
- Prepare 1 of bay leaf
- It’s 1 stick of cinnamon
- You need 2 of cardamom
- It’s 1 of onion
- It’s 1/4 tsp of turmeric powder
- Prepare 1 tsp of red chilli powder
- Prepare 1/2 tsp of coriander powder
- Prepare 1/4 tsp of cumin powder
- You need 1/2 tsp of fennal seeds
- Prepare 1 of spring Curry leaves
- It’s 2 tbsp of oil
- It’s leaves of Coriander
- It’s to taste of Salt
- It’s of for sambar—
- You need 1/2 cup of toor dal(washed and soaked)
- It’s 1/4 cup of tamarind juice
- It’s 1 of onion(sliced long)
- You need 1/2 cup of pumpkin (cubed)..Add more veggies of ur choice)
- You need 2 of green chillies (silt)
- You need 2 tbsp of sambar masala powder
- You need leaves of Few coriander
- You need to taste of Salt
- It’s 1 tbsp of coconut oil
- Prepare 1/2 tsp of mustard seeds
- You need 1/2 tsp of cumin seeds
- It’s 1 Pinch of hing
- It’s 1 of spring curry leaves
- Prepare 2 of dry red chillies
- You need 2 tbsp of oil
- You need of for coconut chutney–
- Prepare 1/2 of fresh coconut
- It’s 1 of green chillies
- Prepare 1/2 tsp of chanadal (soaked)
- You need 2 tbsp of curd
- Prepare 1/2 inch of ginger
- Prepare 1 tsp of raw peanuts
- It’s 1 tsp of oil
- It’s 1/2 tsp of mustard seeds
- It’s 1/2 tsp of cumin seeds
- It’s 1 of dry red chilli
- You need leaves of Few curry
- Prepare of for rice–
- It’s 1 cup of basmati rice (washed and soaked)
- It’s 3 cup of water
- You need to taste of Salt
Step to make South Indian meal:
- Making oats idli—dry roast the oats for 2allow to cool and then to coarse powder.keep aside.
- Heat a pan with oil, add mustard seeds, cumin seeds,chanadal,urad dal..And saute till they splutter.
- Add 1/2cup of suji and roast for 2 And let it cool completely.
- In a mixing bowl take the roasted suji mixture along with oats and salt and mix well.
- Add curd and give it a good mix.add required water and mix to get idli batter consistency.
- Add chopped coriander leaves and leave the batter atleast 10
- Before steaming add b.and mix.
- Meanwhile grease the plates with oil and place cashew in the mould.
- Pour batter into the idli moulds and steam it for 10 to 15
- MAKING KURMA—heat a pan with 2tbsp of oil..Add cardamom, cinnamon, fennal seeds, curry leaves and bay leave
- After they papaya add chopped Onion and saute till it translucent.
- Add green chilli and chopped tomatoe.And cook them till they turn mushy and there is no chunk
- Add salt,red chilli powder, turmeric powder, coriander powder, and cumin powder.
- Mix till they combined.add little water and mix.
- After the raw smell goes off from the masala add coconut milk.(I prepared coconut milk by grinding with water in a mixer and then strained)
- Let it boil for few sec.and then turn off the flame.
- Garnish with coriander leave.And tempering with mustard seeds and curry leave
- MAKING SAMBAR—Cook the toor dal along with water, chopped green chillies,chopped pumpkin salt and turmeric powder.
- Soak the tamarind in warm water and squeeze to extract the juice.
- Heat a pan with 2tbsp of oil..Add mustard seeds, cumin seeds, red dry chilli, hing and curry leave
- Once they papaya add onion and saute till translucent.
- Add sambar masala and sauté.
- Add cooked dal along with needed water and add tamarind juice.bring it to boil or cook for 5 to 10
- MAKING COCONUT CHUTNEY—GRIND together… Coconut, chanadal, peanuts, green chilli, ginger and curd to a smooth consistency.
- Heat a tempering pan with 1tsp oil…Add mustard seeds, cumin seeds, curry leaves, and dry red chilli…When they start to papaya dunk into the prepared chutney and mix
- .MAKING RICE—-In a rice pot boil water and add salt.
- Add prewashed and soaked rice into the boiling stir it and let it cook for 10 to 15
