Maqlooba, or Maqluba, means upside down Looking at the picture, that makes perfect sense, doesnt it? Its a delicious, comforting Palestinian rice dish, a one pot treasure that knows as many variation The Persian Cove is now home to the Farzi Maqlooba.

  17. It’s 4 cups of Water
  18. You need 1 teaspoon of Turmeric powder
  19. It’s 1.5 tablespoons of Crushed Garlic
  20. You need of For frying
  21. Prepare 1 of Potato medium thinly sliced
  22. Prepare A big pinch of Salt for potato
  23. Prepare 1 of Carrot medium sliced
  24. Prepare 1 of Green Bell Pepper medium cut into long pieces
  25. It’s 4 tablespoons of Oil
  26. You need 4 tablespoons of Ghee
  27. It’s of For prawn broth Rice
  28. It’s As needed of Basmati Rice washed, soaked for 20 minutes
  29. You need 4 tablespoons of Oil
  30. You need 2 of Star Anise large
  31. You need 7 to 9 of Cloves
  32. You need 1 of Onion medium sized sliced
  33. It’s 3 of Tomatoes big red and ripe puréed into a thick purée
  34. You need 3 teaspoons or as preferred of Salt
  35. You need 1 tablespoon of Ghee
  36. It’s 2.5 cups of Filtered prawn broth
  37. You need As required of Cilantros chopped for garnishing

Maqluba or Maqlooba (Arabic: مقلوبة‎) is a traditional Iraqi, Lebanese, Palestinian, and Jordanian dish served throughout the Levant. It consists of meat, rice, and fried vegetables placed in a pot which is flipped upside down when served, hence the name maqluba. Step to make Prawn Maqlooba:
  1. In low, Dry roast dried red chillies, coriander seeds,nutmeg stoneflower,cardamom,Cinnamon, black pepper.Cool and grind to a smooth powder. Keep aside.
  2. Marinate prawns in fresh lime juice, crushed garlic, salt.
  3. Add paprika powder.
  4. Mix all together and marinate for 15 minutes
  5. Boil water in a wok. Add the cleaned prawn heads, crushed garlic. Add turmeric powder.
  6. Cover and boil prawn heads for 15 minutes until aromat broth is ready.
  7. Meantime, heat oil, ghee in a pan. Slice medium sized potato.
  8. Drop the potato slices in the hot ghee oil and fry both sides until golden and crisp. Add a big pinch of salt while potatoes are getting fried. Remove the fried golden slice Slice medium carrot. Fry them in the same oil until crunchy.
  9. By now, aromatic prawns head broth is ready. Switch off the heat.
  10. Take out the fried carrots and keep aside. Next add 1 medium sized green bell pepper that is cut into long piece Fry until crunchy.
  11. Next fry the marinated prawns in low heat until golden brown.
  12. In between, strain the prawn head broth. Measure 2.5 cups broth for 3 cups Basmati rice. Keep aside. Heat oil in a wide pan. Add large star anise, medium sized onion sliced. Sauté until pink. Add cloves and toss in the oil.
  13. Pour the fresh tomato purée. Used big ripe tomatoes for the purée. Cook in high for 3 minute
  14. Add the powdered spice powder. Add required salt.
  15. When purée reaches a thick saucy state, add in the drained basmati rice. rice used.
  16. Toss gently and allow to roast for 3 minutes in low heat. Smear tablespoon ghee.
  17. After roasting the rice gently, now pour the measured hot prawn head broth. Simmer the flame. Give a gentle mix thoroughly. Cover the pan tightly and slow cook for 12 min
  18. After 12 minutes, remove the lid. Our rice is cooked. Leave it open.
  19. The other hand, take a cake tin / a round container. Arrange all the fried veggies as first layer. Then insert few fried prawns here and there. Sprinkle chopped cilantro
  20. Coming to our rice, Add the remaining fried prawns to the cooked rice. Toss the rice gently.
  21. Now fill the cake tin with the prepared prawn rice. Spread rice on top of the arranged ingredient Press, level the surface of the tightly packed hot rice. Cover and keep for 5 minute
  22. Then tilt the tin on a plate. Be gentle. Pull up the tin and there you could see our upside down Arabic rice is ready.
  23. Prawn Maqlooba, a delicacy from Saudi is ready. Serve hot with Laban.
