The Ingredients need to make Vegetarian Lazy Rice:
  1. Prepare of Jasmine/long grain rice
  2. It’s of Water
  3. Prepare of Chopped cilantro (or as needed)
  4. It’s of Egg
  5. It’s of Salt and Pepper
Step to make Vegetarian Lazy Rice:
  1. Bring 2 cups of water to a boil
  2. Once at a boil add rice. Cover and let simmer for 10-12 minutes
  3. With about 3 minutes left, stir in most of the cilantro and allow rice to simmer again.
  4. While the rice simmers crack and beat an egg, adding cilantro, pepper, and salt. Add milk (I used soy milk) and scramble
  5. Chop up the egg into fine bits and stir into the rice along with more salt and pepper. Add butter and stir.
  6. Serve immediately as a side or a dish
