The Ingredients needed to make Vegetarian Tortilla Stack:
  1. It’s of green pepper (chopped)
  2. It’s of sweet red pepper (chopped)
  3. You need of onion (chopped)
  4. You need of olive oil
  5. Prepare of frozen vegetarian meat crumbles (thawed)
  6. You need of fresh cilantro (minced)
  7. Prepare of ground cumin
  8. You need of salsa
  9. It’s of flour tortillas
  10. It’s of shredded reduced fat mexican blend cheese (divided)
  11. You need of pickled jalapeno slices
  12. It’s of sliced ripe olives
Step to make Vegetarian Tortilla Stack:
  1. In a large pan coated with some cooking spray, sautè peppers and onion in oil until tender.
  2. Stir in meat crumbles, cilantro and cumin and heat it through
  3. Spread 1/4 cup salsa into a pie plate.(deep dished preferably and 9 inches) coated with cooking spray
  4. Layer it with 1 tortilla,fourth of the meat crumble,1/4 cup of salsa, 1/4 cup of cheese,3 jalapeno slices and a tablespoon of olives
  5. Repeat the layers three times and top with remaining tortilla,salsa,olives,and jalapeno
  6. Cover it and bake at 350° for 30 minutes
  7. Uncover it and sprinkle in some cheese and bake it for 5-10 minutes until cheese is melted.
