The Ingredients needed to make Hyderabadi Chicken Biryani:
- Prepare of For the rice
- Prepare 3 cups of Long Grain Basmati Rice
- It’s 1 tsp of Shahi Jeera
- Prepare 2 of Black Cardamom
- It’s 2-3 of Green Cardamom
- Prepare 2 of flowers Javitri / / nutmeg
- You need 3-4 of Cloves
- It’s 1 tsp of Cumin Seeds
- You need 5-6 of Black Peppercorns
- Prepare 2 of Bay Leaf
- It’s 2 inch of Cinnamon
- You need 2 tsp of Ginger Garlic Paste
- You need 4 tsp of Salt
- Prepare of For the chicken
- It’s 750 g of Chicken Curry Cut
- Prepare 1 tsp of Shahi Jeera
- Prepare 2 tsp of Ghee
- It’s 2 tsp of Ginger paste
- You need 2 tsp of Garlic Paste
- Prepare 1/2 tsp of Garam Masala Powder
- You need 1 tsp of Coriander Powder
- It’s 1/2 tsp of Cumin Powder
- You need 2 tsp of Red Chilli Powder
- You need 1 tsp of Turmeric Powder
- Prepare 2 tsp of Salt
- It’s 2 tbsp of Vegetable Oil
- Prepare 4 tsp of Green Chilli Finely Chopped
- Prepare 2 tbsp of Lemon Juice
- You need 200 g of Curd
- It’s 2 tbsp of Mint Chopped
- Prepare 2 tbsp of Coriander Chopped
- It’s 1/4 cup of Golden Fried Onion
- You need of For assembling the biryani
- You need 1/2 cup of Milk
- Prepare 10-12 strands of Saffron Soaked in 2 tbsp milk
- Prepare 1/2 cup of Golden Fried Onion
- Prepare 1 tbsp of Coriander Chopped
- Prepare 1 tbsp of Mint Chopped
- Prepare 2 tbsp of Ghee
Step to make Hyderabadi Chicken Biryani:
- Wash the rice and soak in water for 40-45 minute Heat water in a large pot. add shahi jeera, black cardamom, green cardamom, javitri / nutmeg, cloves, cumin seeds, black peppercorn, cinnamon, bay leaf, and salt in the pot and bring the water to a boil. Drain the rice and add it in the boiling
- For the Chicken
Mix chicken with shahi jeera, ghee, ginger paste, garlic paste, garam masala powder, coriander powder, cumin powder, red chilli powder, turmeric powder, salt, vegetable oil, green chilli and lemon juice and marinate for 10-12 hour
Add curd, mint, coriander and golden fried onion in the marinated chicken and mix well.
- Transfer the chicken along with the marinade in a heavy bottom pan. Once the rice gets 20% cooked, take out half of the rice and top it over the chicken.
- Once the remaining rice is cooked to 80%, take it out and top it over the 20% cooked rice. Sprinkle milk, saffron soaked in water, golden brown onion, coriander, mint and ghee on top.
- Cover the pan tightly with a lid. Place the pan on a very slow heat for 35-40 minute Remove the lid and mix the biryani gently.
Serve hot.
