1. You need of Pork belly
2. It’s 1 kg of pork belly
3. It’s 1 of large lemon, cut into 1 cm slices
4. You need 1 of large onion, cut into 1 cm slices

6. It’s 2 tsp of kosher salt
7. Prepare 2 tsp of freshly cracked black pepper

11. It’s 1 of shallot, finely chopped
12. Prepare 2 cloves of garlic, finely chopped
13. Prepare 1/2 tsp of dried oregano
14. Prepare 1/2 tsp of red pepper flakes
15. You need of Juice of 1/2 lemon
16. It’s 1 tbsp of Worcestershire sauce
17. Prepare 1 tbsp of red wine vinegar
18. It’s 3 tbsp of extra virgin olive oil

There are two cooking methods involved in making the crispiest pork belly. Fortunately, these methods are exactly the same as making lechon kawali. 1. The day before, use a sharp knife to score a diamond pattern into the skin of the pork. You want to cut down into the fat but not into the meat.
