The Ingredients need to make Low-carb Fried Riced Tofu (Japanese Iri-Tofu):
  1. Prepare of Sauce
  2. You need of coconut amino or soy sauce
  3. It’s of rice wine
  4. It’s of chicken stock
  5. You need of sugar or monk fruit sweetener
  6. Prepare of Stir fry
  7. You need of firm tofu
  8. Prepare of egg
  9. You need of mushrooms
  10. Prepare of Any crunchy vegetables (I used carrot, young corn)
  11. It’s of ground chicken or any leftover meat
  12. It’s of sesame oil
  13. Prepare of Garnish
  14. You need of Green onions
Step to make Low-carb Fried Riced Tofu (Japanese Iri-Tofu):
  1. Wrap the firm tofu with paper towel and microwave for 1 Drain the water, put a plate or a pan on top of it and rest it for a while to drain water more.
  2. Mix the ingredients for the sauce in a small bowl and set aside
  3. Brown your meat in an oiled pan (I like to use sesame oil but avocado oil would be better for keto diet)
  4. When your meat is cooked, break the tofu in, you can just tear it up by your hand or smash to make it crumble as you cook
  5. Stir in your veggies, mushrooms and cook for 1 minute then pour the sauce in; stir fry everything together until the sauce is cooked down and tofu absorb it well
  6. Lastly, move everything to one side of the pan and crack the egg in, mix everything well like you scoop from the bottom and flip over to the top
  7. Garnish with some green onions and done!
