The Ingredients need to make Smoked Kabab and Rice Platter Recipe:
- It’s of Prepare Smoked Kabab
- You need 1 of medium Pyaz (Onion)
- It’s 1 inch of piece Adrak (Ginger)
- You need 8-10 cloves of Lehsan (Garlic)
- You need 2-3 of Green chilli (Green chillies)
- It’s 2 tbs of Podina (Mint leaves)
- Prepare 2-3 tbs of Hara dhania (Fresh coriander)
- You need 1/2 kg of Mutton mince (Qeema)
- You need 1 tbs of Sabut dhania (Coriander seeds) roasted crushed
- Prepare 1/2 tbs of Zeera (Cumin seeds) roasted crushed
- Prepare 1 tsp of or to taste Lal mirch powder (Red chilli powder)
- Prepare 1/2 tsp of Haldee powder (Turmeric powder)
- It’s 1 tsp of Lal mirch (Red chilli) crushed
- It’s of Namak (Salt) ½ tbs or to taste
- Prepare 1 tsp of Garam masala powder
- It’s 2-3 tbs of Cooking oil
- It’s of Water ½ Cup or as required
- Prepare of Prepared Smoked Kabab Gray
- It’s 1/4 Cup of Cooking oil
- It’s 1 of Pyaz (Onion) chopped medium
- Prepare 1 tbs of Adrak lehsan paste (Ginger garlic paste)
- You need 1-2 tbs of Green chilli (Green chilli) chopped
- You need of Lal mirch powder (Red chilli powder) 1 tsp or to taste
- It’s 1 of ½ tbs Dhania powder (Coriander powder)
- It’s 1 tsp of Zeera (Cumin seeds) roasted crushed
- You need 1/2 tsp of Haldi powder (Turmeric powder)
- It’s 1 tsp of Lal mirch (Red chilli) crushed
- Prepare 1 tsp of Garam masala powder
- It’s 1 tsp of or to taste Namak (Salt)
- You need of Water ½ Cup or as required
- It’s 1/2 Cup of Dahi (Yoghurt ) whisked
- It’s of Water 1 Cup or as required
- Prepare 1-2 tbs of Hara dhania (Fresh coriander) chopped
- It’s of Prepare Plain Pulao
- It’s 1/4 Cup of Cooking oil
- You need of Pyaz (Onion) chopped 1 medium
- You need 1 tbs of Green chilli (Green chilli) chopped
- You need 1 tbs of Adrak lehsan paste (Ginger garlic paste)
- You need 1 tsp of Zeera (Cumin seeds)
- Prepare of Lal mirch powder (Red chilli powder) 1 tsp or to taste
- You need 1/2 tsp of Haldi powder (Turmeric powder)
- Prepare 1 tsp of Garam masala powder
- It’s of Namak (Salt) ½ tbs or to taste
- It’s 1/2 tsp of Kali mirch powder (Black pepper powder)
- You need 1/2 Cup of Dahi (Yoghurt ) whisked
- Prepare of Water 3 Cups or as required
- It’s 2-3 tbs of Hara dhania (Fresh coriander) chopped
- It’s of Chawal (Rice) ½ kg (soaked for 30 minutes)
- You need of Assembling
- It’s of Dahi (Yoghurt ) whisked as required
- Prepare of Green chilli (Green chilli)
- It’s of Hara dhania (Fresh coriander) chopped
- Prepare of Pyaz (Onion) rings
- It’s of Koyla (Charcoal) for smoke
Step to make Smoked Kabab and Rice Platter Recipe:
- Prepare Smoked Kabab
In chopper,add onion,ginger,garlic,green chillies,mint leaves,fresh coriander and chop well.
- Add mutton mince,coriander seeds,cumin seeds,red chilli powder,turmeric powder,red chilli crushed, salt,garam masala powder and chop until well combined.
- Grease hands with oil,take a mixture and make kababs of equal sizes (makes 18-20).
- In wok,add cooking oil and place kabab
- Add water and bring it to boil,cover and cook on low flame for 15-18 minutes (at this point, can be store in freezer for up to 1 month) then cook on high flame until golden brown set aside.
- For Smoked Kabab Gravy In a Pan,add cooking oil,onion and fry until light golden.
- Add ginger garlic paste,mix well cook for 1 minute.Then Add green chilli mix well.Then Add red chilli powder,coriander powder,cumin seeds,turmeric powder,red chilli crushed,garam masala powder,salt,mix well cook for a minute.
- Add water,mix well cook for 2-3 minutes or until oil separate
- Add yoghurt,mix well cook for 1-2 minuteThen Add water,mix well and bring it to boil.
- Now add prepared kababs,fresh coriander,mix well and cook on medium low flame for 2-3 minutes,cover and cook on low flame for 4-5 minutes or until oil separates set aside.
- Prepare Plain Pulao
In a pot,add cooking oil,onion and fry until light golden.
- Add green chilli,ginger garlic paste,mix well cook for 2 minute
- Add cumin seeds mix well.Then Add red chilli powder,turmeric powder,garam masala powder,salt,black pepper powder mix well.
- Add yoghurt mix well.
- Add water,fresh coriander,mix well bring it to boil.
- Add rice,mix well,bring to boil and cook on medium high flame until water is reduced,cover and steam cook on low flame for 12-15 minute
- Assembling
On serving dish,add prepared pulao,kabab with gravy and yoghurt.
Garnish with green chilli,fresh coriander and onion ring
Give a charcoal smoke for 2 minutes serve!
