The Ingredients need to make Healthy Risotto With Carrots, Tomatoes, Chicken:
  1. It’s 2 tbsp of Olive oil
  2. You need 1/2 large of White Onion
  3. Prepare 3 large of carrots
  4. You need 4 of Tomatoes
  5. You need 2 of Chicken breasts
  6. Prepare 1 1/4 cup of Brown rice
  7. Prepare 2 tsp of Salt
  8. You need 1 of Parmesan cheese
Step to make Healthy Risotto With Carrots, Tomatoes, Chicken:
  1. Heat the olive oil in a sauce pan on low heat. Begin to finely chop the onion and add to the pan when simmering
  2. Let the onions and carrots sauté together for 10 minutes, turning the heat up to a medium flame. Add some water to the pan if starting to brown.
  3. While the onions are sautéing, finely chop the 4 carrot Add to the pan once the onions turn translucent.
  4. Finely chop the 4 tomatoes and add to the pan along with 2 tsp of salt
  5. Let the onions, carrots and tomatoes cook together for 5 minutes, stirring occasionally.
  6. Chop the chicken breast into cubes and add to pan.
  7. Add 2 tall glasses of water to the pan
  8. When chicken has turned white, add the brown rice to the vegetable mixture.
  9. Let the rice cook for 30 minutes covered, stirring occasionally
  10. Add extra water if needed. When the rice is fully cooked and all the water is absorbed, its ready to serve
  11. Sprinkle Parmesan cheese on top of desired
  12. Enjoy!
