  6. It’s 4-5 of whole black peppercorns
  7. Prepare 1 of bay leaf

  9. It’s For of Gravy
  10. Prepare 2 of big onions chopped
  11. It’s 1 of medium size tomato coarsely chopped
  12. It’s 2-3 of Red chillies sliced
  13. Prepare 1 of star anise
  14. You need 3-5 of whole black peppercorns
  15. Prepare 1/2 ” of cinnamon stick
  16. It’s 5-6 of curry leaves
  17. Prepare 1 Sprig of mint leaves
  18. You need 1 of ginger chopped
  19. It’s 2-3 of garlic cloves chopped
  20. It’s 4 of boiled eggs
  21. Prepare 1 tsp of red chilli powder
  22. You need 1 tsp of coriander powder
  23. You need 1 tsp of black pepper powder
  24. It’s 2 Tbsp of yoghurt
  25. You need As per taste of Salt
  26. It’s 2 Tbsp of ghee
  27. It’s 1 Tbsp of oil
  28. It’s As required of Water a little bit
  29. You need Few of mint leaves
  30. It’s Handful of coriander leaves
  31. It’s For of Assemble and garnish
  32. Prepare Few of Cashew nuts fried
  33. It’s Few of Raisins fried
  34. It’s 1 tbsp of ghee
  35. Prepare 1 of onion chopped and fried
  36. You need Few of Mint leaves
  37. You need Few of saffron dipped in 5 Tbsp milk
Step to make Egg Biryani in South Indian style:
  1. To prepare rice - in a heavy bottomed wok heat ghee and add star anise, bay leaf, black peppercorns and bay leaf. Stir for 2 min Add rice and stir lightly so that the ghee is mixed into each grains of rice yet rice doesn’t break. Add water and cook 3/4. Set aside.
  2. For preparing ghee - In a wok heat ghee, add whole black peppercorns, bay leaf, star anise, red chillies, ginger, garlic, curry leave Stir and add chopped onions and fry till a little brown in colour. Add chopped tomatoes and cook until soft.
  3. Add coriander powder, red chilli powder, black pepper powder and stir until fragrant.
  4. Add yoghurt and salt and stir until ghee surface Add boiled eggs one by one and mix all spices well with boiled egg Add a little water and cook for 2 min Add mint leaves and coriander leave Stir and set aside.
  5. To assemble - in a wok add rice first, spread the egg one by one and spread the spices well, add another layer of rice, saffron in milk, fried onions, red chillies, fried cashew nuts, fried raisins, mint leave Cover and keep it on Dum for 5-10 min
  6. Serve hot.
