The Ingredients needed to make Zucchini Mushroom Rice Skillet:
  1. It’s 2 tbsp of olive oil
  2. You need 2 cup of fresh thick sliced button mushrooms
  3. You need 4 of fresh shiïtaki mushroom caps ( quartered )
  4. You need 7 oz of thick sliced yellow squash
  5. It’s 7 oz of thick sliced zucchini
  6. It’s 1 small of onion medium thick sliced
  7. You need 1 tbsp of low sodium soy sauce
  8. Prepare 2 cup of low sodium broth or water (any kind)
  9. Prepare 1 1/4 cup of instant dry rice
  10. Prepare 1/2 tsp of lemon pepper
Step to make Zucchini Mushroom Rice Skillet:
  1. In a large skillet heat oil.
  2. Add onion, mushrooms and garlic. Sautee until crisp tender.
  3. Add broth/water, soy sauce, lemon pepper and zucchini
  4. Bring to a boil.
  5. Add rice and stir well. Boil until 3/4 of the liquid is gone. Stirring occasionally.
  6. Cover and simmer for 5 minutes undisturbed.
  7. Turn off heat and remove lid. Let stand 5 minutes more undisturbed.
  8. Fluff and serve hot.
  9. Enjoy!
  10. Serves 4 as a side or serves 2 as a meal.
  11. Easily add steak or chicken to first saute… to make it a meal.
