The Ingredients need to make Southindian Idli sambhar:
- It’s 1 kg. of Suji (semolina)
- Prepare 1 bowl of curd
- You need 1 tsp. of Baking soda
- It’s 1 tsp. of Baking powder
- Prepare To taste of Salt
- Prepare 1 tsp of Rai
- Prepare of Sambhar ingredients
- Prepare 300 gm of Pumpkin
- It’s 250 gm of Brinjal
- It’s 500 gm of Guard
- You need 4-5 stick of Drum stick
- It’s 1 1/2 tbsp of Sambhar masala
- Prepare 1/2 tsp of Haldi
- It’s as per taste of Salt
- You need 1/2 tsp of Dhaniya powder
- You need 1/2 tsp of Red chilli powder
- Prepare 10-15 leaves of Meethi neem
- You need 2 of Red chilli dry
- You need 1 tbsp of Raai
- It’s 2 of Onion
- You need 1/2 cup of Imli pulp(tamarind)
- It’s 1 cup of Arhar ki daal
- You need 1/2 cup of Chana daal
- It’s 2 of Onion chopped
- It’s 2 of Tomato chopped
- Prepare as required of Ghee/oil
Step to make Southindian Idli sambhar:
- Soak semolina. Add curd mix well. Then add baking soda and baking powder+salt mix and covered and rest 1 -2 hr.
- Cut all veggie Soak dal and chana daal 1/2hr.
- Take pressure cooker all veggies and soaked dal and mix haldi+dhaniya+chilli+salt+and water mix and cook 3 -4 whistle.
- Take a frying pan/tadka pan. Add 1 tbsp. Ghee/oil. Add raai sprinkle, curry patta, dry red chilli, saute add onion chopped)golden brown clr ane take fry. Then add tomato saute karein achhi trh fry kry. Sambar mein add kar de.
- Pressure release kar ke sambar chk kry masher s mash kar de ar imli ka pulp/lemon /satry add kry. Sambhar masala add karein mix well. Tdka lagae.
- Semolina is fermant. After 1or 2 hr. 1/2tsp oil ko grm kry add rai 1tsp. Sprinkle. Ise idli batter mein tdka lage ar mix kry. Add some salt.
- Take idli stand and grease with oil. Pour idli batter. 1 glaas water ko grm kry idli cooker mein pani boil hone lgy tb idli stand ko usme rkhkr 10 to 15 min take steem kry.
- After 10 min chk the idli with the hlp of a toothpick /knife. Agr clean nikle to idli tayar hai. Serve with sambhar
- Note agr idli fluffy nahi ban rhi hai to eno mix kar ke bhi bana saktein hai
