The Ingredients need to make Italian Wedding Soup:
  1. It’s of Meatballs
  2. You need 1/2 pound of ground veal
  3. You need 1/4 cup of panko bread crumbs
  4. Prepare 2 Tbsp of parmesan cheese
  5. It’s 1 clove of garlic minced
  6. You need 2 Tbsp of milk
  7. It’s 1 of egg beaten
  8. It’s 1 tsp of salt
  9. Prepare 1/2 tsp of ground pepper
  10. You need 1 1/2 tsp of Italian seasoning
  11. It’s of Soup
  12. It’s 2 Tbsp of olive oil
  13. It’s 1 cup of sweet onion finely chopped
  14. It’s 1 cup of carrots finely chopped
  15. You need 1 cup of celery finely chopped
  16. It’s 2 cartons of chicken stock (about 8 cups)
  17. You need 1 tsp of oregano
  18. Prepare 1/2 tsp of ground black pepper
  19. Prepare 1/2 cup of ancini de pepe (small pasta)
  20. Prepare 2 cups of baby spinach
  21. You need 1/4 cup of parmesan cheese
Step to make Italian Wedding Soup:
  1. Preheat oven to 350 degree Mix all ingredients for the meatballs together and shape into small meatball Place on a pan lined with parchment paper and bake for approximately 20 minutes or until cooked through.
  2. Heat olive oil in a large saucepan and saute the onion. Add the next five ingredients for the soup and bring to a boil. Reduce heat and simmer for about 10 minute Add the ancini de pepe and simmer for another 6 minutes or until pasta is tender. Add meatballs, spinach and parmesan cheese and cook for 2 more minute
  3. Serve and enjoy!
