A couple of eggs, baby carrots, peas and soy sauce is all you need.

The Ingredients need to make Chinese fried rice:
- Prepare 1 of bulb finely chopped onion
- It’s 1 of cksp veg oil
- It’s 3 of eggs
- You need 1 tbsp of dark soy sauce
- Prepare 2 tbsp of sesame oil
- Prepare 1 kg of basmati Rice
- You need 2 kg of chicken
- You need 1 cup of finely chopped carrot
- You need 1/2 cup of spring onions, chopped
- You need 1 cup of green pea chopped
- It’s 2 of red bell pepper diced
- Prepare 2 of green bell pepper diced
- You need 1 of yellow bell pepper diced
- Prepare 1 tbsp of oyster sauce
- You need 4 of stock cube
- You need 5 of fresh pepper diced
- It’s to taste of salt
- You need 1 tsp of oregano
- Prepare 1 tbsp of crushed garlic and ginger
Know what type of rice to use.
Chang starts with long-grain jasmine rice. It can be any kind of rice, but I prefer jasmine because its what I grew.
To cook in a wok on a gas burner: Preheat a wok over high heat until lightly smoking.
If cooking on a powerful outdoor wok burner, reduce heat to minimum.
Step to make Chinese fried rice:
- Spice chicken to your desired taste per boil once its tender; preheat oven and send the chicken to grill in the oven
- Heat up water in a big pot once the water is boiling hot turn off the heat and pour in your basmati rice, stir and allow it rest for about 5 to 7 minute wash off the starch in the rice and drain
- While you were waiting for the soaked rice to rest; break egg in a bowl and beat lightly with a fork, add a tablespoon of veg oil and fry egg scrambled set aside once its done
- Heat up a frying pan, add vegetable oil once it hot enough add onions with my wooden spoon stir in the garlic and ginger and saute
- Add pepper, soy sauce, sesame oil and oyster sauce stir then add oregano, salt and stock cube
- Stir in carrot, all the bell pepper and green peas, stir to mix in properly
- Heat up a big pot and set on low heat, add a little portion of the drain rice, a cooking spoon of the sauce mix and small portion of the fried egg stir properly to mix rice and sauce very well repeat this method till you are done adjust seasoning if need be
- Wrap foil paper on the pot of rice and cover pot allow rice simmer; once rice is tender turn off heat and add spring onions on top
- Serve with the grilled chicken on the side. They loved it
If using a standard Western burner, keep heat on high throughout cooking.
Chinese fried rice includes chopped spring onions sprinkled on top, whilst Thai fried rice may prefer basil.
