The Ingredients need to make Jamaican Christmas Cake:
  1. It’s 1 1/4 cup of Jamaican white over proof rum
  2. You need 1 1/4 cup of port wine or red label wine
  3. It’s 1/2 cup of raisins
  4. You need 1/2 cup of currants
  5. Prepare 1/2 cup of dates
  6. Prepare 1/2 cup of dried prunes
  7. It’s 1/2 cup of maraschino cherries
  8. Prepare 1/2 cup of chopped almonds
  9. You need 1 cup of orange juice
  10. Prepare 1 of grated zest from one lime
  11. It’s 1 cup of dark molasses
  12. Prepare 2 tbs of browning
  13. It’s 1 tbs of lime juice
  14. It’s 1 tsp of vanilla extract
  15. You need 1 tsp of almond extract
  16. It’s 9 of eggs
  17. Prepare 2 cups of butter
  18. It’s 2 1/2 cups of flour
  19. You need 2 cups of brown sugar
  20. You need 3 tsp of baking powder
  21. It’s 1/2 tsp of ground nutmeg
  22. Prepare 1/2 tsp of ground all spice
  23. Prepare 1/2 tsp of ground clove
  24. You need 1/2 tsp of ground cinnamon
  25. Prepare Pinch of salt
Step to make Jamaican Christmas Cake:
  1. Preheat oven to 350 degree then grease and flour 2 round baking pans or which size pan u choose.
  2. In a blender add rum, wine, dates, raisins,cherries with their liquid, prunes, currants, chopped almond, orange juice and blend until all the fruits are chopped. Let sit for 1hr (2days is way better 😀)
  3. In a large bowl cream sugar and butter. Then add eggs mix well
  4. Add molasses, browning, blended fruit mixture, lime juice, vanilla, almond extract and stir
  5. Add flour, nutmeg, cloves, all spice, baking powder, cinnamon, salt, lime zest and stir. Do not over mix
  6. Pour the batter into your baking pans and bake for 1hr. You can put some cherries in the center of the batter if you wish. Stick a toothpick in the middle to ensure its done. Tooth pick will come out clean if its done. Enjoy!
