The Ingredients needed to make Chili Mango Chicken Stir-fry:
- You need 1 lb of boneless skinless chicken, thinly sliced
- It’s 2 Tbsp of dry sherry, divided
- You need 2 tsp of soy sauce, low sodium
- It’s 2 tsp of cornstarch, divided
- Prepare 1 tsp of salt, divided
- Prepare 1/3 cup of chicken broth, low sodium
- It’s 1 Tbsp of sriracha
- It’s 1 Tbsp of peanut oil (substitute sesame oil if needed)
- It’s 3 of quarter size pieces of ginger root (peeled and smashed)
- You need 2 cups of green bell peppers, chopped
- You need 1 cup of red bell peppers, chopped
- You need 1 of large mango, 1/2 inch slices
Step to make Chili Mango Chicken Stir-fry:
- Mix 1 Tbsp sherry, 2 tsp soy sauce, 1 1/2 tsp cornstarch, 1/2 tsp salt. Coat chicken and set aside
- Mix chicken broth, sriracha, 1 Tbsp sherry, 1/2 tsp cornstarch. Set aside
- Heat skillet or wok over high heat. Add oil, then ginger - stir-fry until fragrant
- Add chicken, cook until no pink remains but chicken should not be done
- Add bell peppers and 1/2 tsp salt, let cook 1-2 minutes
- Stir broth and add to wok stir-fry 1-2 minutes or until chicken is cooked through
- Remove from heat mix with mango
