The Ingredients needed to make Zangi Chicken Karaage:
  1. You need 2 of Chicken thigh meat
  2. It’s 1 of Salt and pepper
  3. It’s 1 of 1/2-2 tablespoons Sake
  4. Prepare 1 tsp of Mirin
  5. It’s 1 tsp of Sugar
  6. It’s 1 of 1/2-2 tablespoons Soy sauce
  7. You need 1 tsp of Sesame oil
  8. It’s 1 tsp of Grated ginger
  9. You need 1 of optional, (to taste) Grated garlic
  10. You need 1 of Katakuriko
  11. Prepare 1 of Frying oil
Step to make Zangi Chicken Karaage:
  1. Remove the excess fat from the chicken and cut into chunk
  2. Place the chicken in a plastic bag and add the salt and pepper. Rub together with your hand
  3. Add the remaining ingredients and rub it all together well. Let sit from 1 hr to overnight.
  4. Pat dry the excess moisture from the marinade with a paper towel and then cover with katakuriko as thinly as possible.
  5. Deep fry in 160°C oil. At the end, slightly raise the temperature of the oil and fry until crispy.
  6. Pack in your bento!
