  4. Prepare 1/4 tsp of xanthan gum if using GF flour
  5. Prepare 2 tsp of baking powder
  6. You need 1/2 tsp of bicarb / baking soda
  7. It’s 112 g of gold foil-wrapped Stork margarine (vegan butter), cubed
  8. Prepare 4 tbsp of golden syrup / honey
  9. Prepare of cinnamon topping
  10. You need 1 tbsp of soft brown sugar
  11. You need 1/2 tsp of ground cinnamon
  12. You need of glaze
  13. It’s 100 g of icing sugar / powdered sugar
  14. Prepare 4 tbsp of coconut milk
  15. You need 1/2 tsp of vanilla extract
Step to make Vickys Cinnamon Glazed Scones, GF DF EF SF NF:
  1. Stir the lemon juice and coconut milk together and set aside
  2. Preheat the oven to gas 6 / 200C / 400F and ready a baking sheet
  3. Mix the flour, xanthan gum if using, baking powder and bicarb together
  4. Cut in the cubed butter with a pastry knife or a fork until the mixture looks like crumbs
  5. Mix the milk and syrup in and form a dough
  6. Lay a square of parchment paper out and pat your dough down into a 1/2 inch thick round
  7. Cut into 8 triangles
  8. Mix the brown sugar with the cinnamon
  9. Glaze the dough with some coconut milk and sprinkle with the brown sugar cinnamon mixture
  10. Bake for 15 minutes
  11. Let cool a little on the tray before separating out the triangles then bake a further 8 - 10 minutes or until set
  12. Mix the icing sugar, milk and vanilla together, adding enough milk to make a thick glaze
  13. Drizzle over the scones before serving
  14. Delicious!
