- You need 225 g of gluten-free / plain flour
- You need 2 tsp of baking powder
- You need 1/4 tsp of xanthan gum
- You need 1/4 tsp of cayenne or mustard powder
- You need 1/4 tsp of salt
- You need 50 g of Stork block margarine in the gold foil wrapper
- Prepare 120 ml of light coconut milk
- Prepare 3 of spring onions, thinly sliced
- It’s 60 g of Violife free-from brand grated cheese
Step to make Vickys Cheese Onion Scones, GF DF EF SF NF:
- Preheat the oven to gas 6 / 200C / 400F and line a baking sheet with parchment paper
- Mix the flour, xanthan gum, cayenne / mustard powder and salt in a bowl
- Rub in the margarine until the mixture resembles breadcrumbs
- Add the cheese, spring onion and milk and form a soft dough
- Pat the dough out on a floured surface to 1 inch thick
- Use a 5cm cookie cutter to cut round Reshape the dough as required and cut as many rounds as you can. I get 8, forming the last by hand
- Place on the baking tray an inch apart, brush with some extra milk and sprinkle with some extra cheese
- Bake for 12 - 15 minutes
- Let cool a little then split and spread with Violife cream cheese style spread and a slice of ham
