The Ingredients needed to make Mughlai Chicken Biryani:
- You need For of ground masala paste-
- Prepare 2 of Garlic pods
- It’s 2 large of Ginger pieces(25 gms)
- Prepare 5 of Green chillies
- You need 2 of Medium sized Tomatoes
- It’s For of marination
- You need 1 kg of Chicken
- Prepare 2 cup of Fried Onion
- It’s 1/2 tsp of Turmeric powder
- You need 1 cup of Curd
- You need 3/4 tsp of Salt
- Prepare For of Chicken masala-
- Prepare 2 tsp of Kashmiri chilli powder
- It’s 2 tbsp of Oil
- You need 1 cup of Water
- You need as per taste of Salt
- You need 3 tbsp of Biryani masala
- Prepare For of Rice-
- Prepare 2 cups of Basmati Rice
- Prepare 2 of Black Cardamoms
- It’s 4 of Green Cardamoms
- Prepare 1 inch of Cinnamon stick
- Prepare 2 of Bay leaves
- You need 4 of cloves
- Prepare 2 tbsp of Ghee
- Prepare as per taste of Salt
- It’s 31/2 cups of Water
- It’s For of Garnishing-
- It’s 2 tbsp of Ghee
- It’s 1/2 tsp of Saffron
- You need 2 tbsp of Warm Milk
- You need 1/2 cup of Fried onion
- Prepare 2 tbsp of Finely chopped Coriander leaves
- You need 6 of Fried Cashews
- You need 8 of Fried Raisins
Step to make Mughlai Chicken Biryani:
- Clean and wash chicken piece
- Blend together all the ingredients for ground masala and make a fine paste.
- Add this paste in chicken piece
- Add all the ingredients mentioned For marination and mix well.
- Set aside for at-least 1 hour.
- Heat 2 tbsp oil in a pan.
- Add the marinated chicken.
- Add Kashmiri chilli powder, biryani masala, water and mix well.
- Cook on medium heat until the chicken is cooked well and the gravy becomes thick.
- Add salt if needed and set aside.
- Wash and soak the rice for 20 minute
- Drain the water completely and set aside.
- Soak saffron in warm milk and set aside.
- In a big pan or cooker heat ghee.
- Add whole spices mentioned for rice.
- Add soaked and washed rice and fry for a minute.
- Add water and salt.
- Close the lid and cook till 3/4 done or in cooker cook for 1 whistle.
- Let it cool completely.
- In a biryani pot, add 2 tbsp of ghee and spread the ghee evenly to the bottom of the pot.
- Then put the prepared half of chicken masala, and spread it evenly.
- Then layer half of the rice over the chicken masala.
- Sprinkle ¼ cup fried onion and chopped coriander leave
- Then layer rest of chicken masala.
- Again layer the rest of the rice on top of it.
- Sprinkle remaining fried onion, chopped coriander leaves and half of fried Cashews and raisin
- Finally, pour 1 tbsp of melted ghee and the saffron milk on top.
- Close the biriyani pot with a tight fitting lid.
- Put the biryani pot on the stove, and cook for about 15 minutes over low flame.
- Remove from heat, mix the rice and chicken from the bottom of the pan using a long spoon.
- Serve hot with Raita or
