The Ingredients needed to make Malbar Chicken Biryani:
- It’s 1 kg of chicken cut into pieces
- You need 4 tbsp of oil
- It’s 2 cups of sliced onions
- It’s 3 tbsp of ginger garlic paste
- Prepare 5-6 of green chillies paste
- Prepare 1/2 tsp of haldi powder
- It’s 1 tbsp of jeera powder
- You need 1 tbsp of dhania powder
- Prepare 1 tbsp of red chilli powder
- Prepare 2 tbsp of biryani masala
- You need 3 of tomatoes cut in semicircles
- It’s 1/2 cup of chopped coriander leaves
- Prepare 1/2 cup of chopped mint leaves
- Prepare 1/2 cup of curd
- You need 1 tbsp of lemon juice
- You need 2 tbsp of coconut milk
- You need 2 cup of fried onions
- It’s 1 handful of fried cashewnuts and raisins
- Prepare of Salt as per taste
- It’s 750 gms of basmati rice
- You need 4 tbsp of oil or ghee
- It’s 1 of small stick dalchini
- You need 5 of Cloves
- You need 5 of green cardamoms
- It’s 1 of star anise (badiyan)
- You need 1 tsp of fennel seeds
- Prepare 2 tsp of saffron colour
- You need To taste of Salt
- Prepare As needed of Water
As biryanis go, it is relatively mellow, and different because the rice is cooked separately before it is added to the chicken.

- Add curds cook till it leaves the sides, add lemon juice, some coriander and mint leaves cook till the chicken is tender then add the coconut milk mix and off the flame
- Rice - Soak the rice for half an hour. Heat oil in a vessel add dalchini,laung, cardamoms, staranise, fennel seeds saute for a min add rice stir it then add water 1 inch above the rice, add salt and cover and cook till rice is done. Fluff up the rice with a fork
- Assembling- Grease a heavy bottom pan add the chicken masala then add some fried onions, chopped coriander and mint leaves, cashewnuts raisin Then add the cooked rice on top of the chicken masala
- Sprinkle saffron colour, fried onions, chopped coriander and mint leaves and cashewnut Cover it with a lid and keep it on a tawa for dum on medium flame for 15 to 20 mins or till steam comes out. While serving garnish with fried onions
