The Ingredients needed to make Snapper Tacos with Chipotle Cream:
  1. Prepare 4 of 8-inch fat-free flour tortillas
  2. You need of Chipotle Cream
  3. You need 1/2 cup of fat-free sour cream
  4. You need 1 tsp of 1/8 salt
  5. It’s 1 of canned chipotle chile in adobo sauce, seeded and minced
  6. You need of Reserved Onion Mixture
  7. Prepare 1 1/2 cup of chopped onion, divided
  8. Prepare 1 1/2 cup of chopped onion, divided
  9. It’s of Fish Mixture
  10. Prepare 2 tbsp of butter
  11. You need 1 tsp of ground cumin
  12. It’s 1/2 tsp of salt
  13. You need 1/2 tsp of ground cinnamon
  14. You need 4 of garlic cloves, minced
  15. Prepare 3 tbsp of chopped fresh cilantro
  16. You need 1 lb of snapper filets, skinned
  17. It’s 1 tsp of grated lime rind
  18. It’s 2 tbsp of fresh lime juice
Step to make Snapper Tacos with Chipotle Cream:
  1. Combine sour cream, 1/8 tsp salt, and chile; set aside.
  2. Combine 1/2 cup onion and 1/2 cup tomato; set aside.
  3. Melt butter in a large nonstick skillet over medium heat.
  4. Add 1 cup onion, 1 cup tomato, cumin, 1/2 teaspoon salt, cinnamon, and minced garlic.
  5. Cook 5 minutes, stirring frequently.
  6. Stir in cilantro.
  7. Arrange fish over onion mixture in pan; cover and cook 3 minute
  8. Turn fish; cover and cook 2 minute
  9. Break fish into chunk
  10. Stir in rind and juice; cook 2 minute
  11. Remove from heat.
  12. Warm tortillas according to package direction
  13. Fill each tortilla with 1/2 cup fish mixture and 1/4 cup reserved onion mixture; top each serving with 2 Tbsp chipotle cream.
  14. Fold in half or roll up and enjoy!
