The Ingredients needed to make Chicken Biryani:
  1. You need For of Rice
  2. It’s 2 cups of Basmati rice

  7. Prepare 1 of Bay leaves
  8. Prepare 2 tsp of Lemon Juice
  9. Prepare to taste of Salt
  10. It’s For of Marinating Chicken
  11. Prepare 1/2 kg of Chicken
  12. You need 1/4 tsp of Turmeric powder
  13. Prepare 1 tsp of Red Chilli powder
  14. Prepare 1/2 cup of yoghurt
  15. Prepare 1/2 tsp of Biryani masala
  16. You need to taste of Salt
  17. You need For of Chicken Masala
  18. It’s 4 medium of Onion (thinly sliced)
  19. You need 2 medium of Tomatoes(chopped)
  20. It’s 15 nos of Green Chillies (chopped)
  21. You need 1 inch of Ginger
  22. It’s 8-10 of Garlic cloves
  23. It’s 1 tbsp of Biryani masala
  24. Prepare 1/2 tsp of Red chilli powder
  25. It’s 2 tbsp of Coriander powder
  26. You need 1/4 tsp of Turmeric powder
  27. It’s 1/4 cup of Mint leaves(chopped)
  28. Prepare 1/2 cup of Coriander leaves (chopped)
  29. You need 2 tbsp of Oil /Ghee
  30. It’s For of Garnishing
  31. You need Handful of Cashew nuts
  32. It’s Handful of Raisins
  33. You need 3-5 tbsp of Ghee
  34. You need 1/2 cup of Onion (thinly sliced)
  35. Prepare Handful of Coriander leaves
  36. You need Handful of Mint leaves

I had never made chicken biryani before I decided to share this recipe. Chicken Biryani is one of the more complicated rice dishes in Indian/pakistani cooking. Being quite an amateur cook I still managed to cook up a feast with this single dish and my hubby is still licking hi Making a chicken biryani is a lengthy.

Step to make Chicken Biryani:
  1. Cooking the Chicken Masala Clean with pinch of turmeric and cut the chicken into medium-sized pieces and drain the water well. Grind ginger, garlic, green chillies into a thick paste and set it aside. Marinate the chicken with all above-mentioned ingredients “For Marinating Chicken” for 1 hrs and shallow fry it. Heat oil/ghee in a pan, add thinly sliced onion saute, add the ginger, garlic, green chilli paste,saute until brown colour.
  2. Add chopped tomatoes and saute for few second Add the biryani masala,turmeric powder,red chilli powder,coriander powder,combine well and saute untill the raw smell goe Add the chopped coriander mint leaves and mix well. Then add the shallowed fried chicken and cover cook on medium flame for about 10 mins add water if needed and adjust salt.
  3. Cooking the Rice Soak the rice for 30 mins and drain the water completely. Boil the required water,with half of the whole masala (cardamom, cloves cinnamon) and add little oil and salt. Heat ghee in a pan add whole masala. Add the cleaned drained rice, when the rice starts cracking add it to boiled water and cook uncovered the rice for 8-10 min When rice done,drain the excess water immediately spread the rice on a tray and sprinkle the lemon juice. Let it cool.
  4. Layering the Biryani Preheat the oven to 180 degree 10 minutes before baking the biryani. Apply some ghee to a baking dish. Put one layer of rice in the dish. Sprinkle some chopped coriander mint leaves, fried onion, cashew and raisins (if using) and drizzle some ghee. On top of that spread some chicken masala. Repeat the process until the masala and rice is finished. The top layer should be of rice.Bake in the preheated oven for 20-25 min
  5. Garnishing Heat ghee/oil in a pan and fry the cashews raisin Remove them from the pan in the remaining ghee/oil fry the onions till it becomes golden brown. Drain the excess ghee in a paper towel keep it aside. Garnish the baked biryani with fried cashew, raisins, onions, chopped mint and coriander leave Serve hot with pickle, raita pappad.
