Hyderabadi chicken biryani is an aromatic, mouth watering and authentic Indian dish with succulent chicken in layers of fluffy rice, fragrant spices and fried onion This stovetop version of the well-known Indian rice dish is made with chicken and seasoned with turmeric and ginger. The Ingredients need to make Chicken Biryani:
  1. Prepare 2 kg of Chicken with bones
  2. It’s 2 kg of Basmati rice
  3. Prepare 3 of chopped tomatoes

  5. It’s 3 tablespoons of Ginger-Garlic paste
  6. Prepare 1 and 1/2 cup of Yoghurt
  7. Prepare 1 cup of Biryani masala
  8. You need 3-4 of Alu bukhara(dry prunes)
  9. Prepare As per taste of Salt
  10. Prepare 2 cups of Cooking oil
  11. Prepare 4 of Big Potatoes
  12. Prepare 1 of Lemon
  13. You need 1 bunch of Mint leaves
  14. Prepare 8-10 of Saffron strandss soaked in 3 tablespoon warm Milk
  15. You need 4-5 tablespoons of Ghee
  16. It’s 3 of whole black Cardamom
  17. It’s 2-3 (1 inch) of Cinnamon stick
  18. Prepare 5-6 of Cloves
  19. It’s 5-6 of green Cardamom
  20. You need 5-6 of Black Pepper corns
  21. You need Few of Drops of Biryani essence
  22. It’s For of the biryani cover
  23. It’s 2 cups of All purpose flour
  24. You need 1/4th teaspoon of Salt
  25. You need 1/2 teaspoon of Biryani masala
  26. Prepare 1 teaspoon of Ghee and more to brush on the top
  27. You need For of Homemade Biryani masala-
  28. Prepare 4 tablespoons of Coriander powder
  29. You need 5-6 of dry red Chillies
  30. You need 2 tablespoons of Cumin seeds
  31. Prepare 2 inches of Cinnamon sticks
  32. Prepare 1 tablespoon of Caraway seeds
  33. It’s 1 tablespoon of black Pepper corns
  34. You need 1 tablespoon of Mustard seeds
  35. It’s 2 of black Cardamom (only seeds)
  36. It’s 4 of green Cardamom
  37. You need 1 of small javetri
  38. You need 1 teaspoon of Fennel seeds
  39. It’s 1/2 teaspoon of Nutmeg powder
  40. It’s 1 tablespoon of Mango powder
  41. Prepare 1/4th teaspoon of Turmeric powder
  42. Prepare 3-4 of Bay leaves
  43. It’s 2 tablespoons of Salt

I had never made chicken biryani before I decided to share this recipe. Chicken Biryani is one of the more complicated rice dishes in Indian/pakistani cooking. Being quite an amateur cook I still managed to cook up a feast with this single dish and my hubby is still licking hi Making a chicken biryani is a lengthy.

Step to make Chicken Biryani:
  1. Dry roast all the whole spices for biryani masala and then grind with other spice powder as mentioned in the ingredient section of biryani masala. Its not necessary to make fine powder. Little coarse powder is better.

  7. Fry them in the same oil where onions are fried to light golden brown.
  8. Transfer to a dish.
  9. Now transfer the remaining oil to a big heavy bottomed sauce pan and add in 3 chopped onion
  10. Saute for 5-6 minutes and then add in 3 tablespoons ginger-garlic paste.
  11. Saute for a minute and then add in 3 chopped tomatoe
  12. Stir and cook for 4-5 minutes and then add in the chicken piece
  13. Stir and cook for 5 minutes more and then add in previously prepared biryani masala along with whole garam masalas like black cardamom, green cardamom, cinnamon, cloves and black pepper
  14. Mix everything well with a spatula and then add in 1 and 1/2 cup of yoghurt. Also add allu bukhara.
  15. Again mix well, add 1 cup of water, cover and cook in medium heat for about 20 minutes or until chicken cook
  16. In the mean time clean and soak 2 kg of long grain basmati rice for atleast 1/2 an hour.
  17. Also soak saffron in warm milk.
  18. When chicken cooks completely remove from heat. Do not completely dry up the gravy.
  19. Add rice in boiling water with 1 lemon juice and 1 tablespoon of salt. Drain when rice cooks 70%.
  20. Take a individual size earthen pot and place some prepared chicken curry at the bottom. Also place 2 fried potato piece
  21. Now make a layer of 70% done rice.
  22. Now sprinkle 1 tablespoon of melted ghee, 1 teaspoon of saffron soaked milk, 1 tablespoon of fried onions(beresta), few mint leaves and 1 drop of biryani essence.
  23. For the cover take maida/all purpose flour, salt biryani masala and ghee. Mix together and make a dough with
  24. Roll a lemon size ball from the dough to make a thin roti.
  25. Cover the biryani bowl with the roti and seal it properly.
  26. Brush little ghee on the top and bake the pot in pre heated oven for 15 minutes at 180 degree C.
  27. Reduce the heat to 150 degree and bake for another 10 minute Your scrumptious biryani is ready now.
  28. With a knife cut the edges to uncover and serve with salad and raita.
  29. You can alternatively make the biryani in stove top. Just make the layers as I have shown above. Cover with aluminium foil and lid and cook in low heat from 25 minute
