The Ingredients needed to make Hot ‘and’ Spicy Chicken Kothu Paratha:
  1. You need 4 of left over or freshly made parathas
  2. Prepare 1 cup of onions chopped fine
  3. Prepare 1 cup of tomatoes chopped fine
  4. You need 4 of green chillies split vertically
  5. Prepare 1 tsp of ginger garlic paste
  6. You need as needed of Oil for frying
  7. You need as needed of Water
  8. Prepare 1 tbsp of soy sauce
  9. Prepare 1 tbsp of green chilli sauce
  10. You need 2 tbsp of ketchup
  11. Prepare 1 tbsp of red chilli powder
  12. You need 1.5 tsp of salt or as required
  13. It’s 1 tsp of pepper powder
  14. It’s 2 tsp of turmeric powder
  15. It’s of For chicken marinade
  16. Prepare 500 GMs of chicken boneless
  17. Prepare 1 tbsp of red chilli powder
  18. You need 1 tsp of garlic powder
  19. It’s 1 tsp of ginger powder
  20. It’s 1 tsp of coriander powder
  21. Prepare 1 tsp of garam masala
  22. Prepare 1.5 tsp of salt
  23. Prepare 1/2 cup of curd
  24. It’s 1Handful of curry leaves
  25. It’s of For egg scramble
  26. You need 2 of eggs
  27. Prepare to taste of Salt
  28. It’s 1/4 tsp of turmeric powder
  29. You need as needed of Oil to fry
  30. It’s of For garnishing
  31. You need 2 tbsp of Coriander leaves
  32. Prepare 1 tsp of Curry leaves
  33. You need 1 tbsp of Lime juice
Step to make Hot ‘and’ Spicy Chicken Kothu Paratha:
  1. Make the chicken marinade with the ingredients mentioned above and let it rest in room temperature for 10 min Then in a pan fry it till the water runs clear and you get little crispy skin. Remove from pan and set aside.
  2. Make the egg scramble. Don’t over cook it. In the same pan fry curry leaves for garnishing until it gets crispy.
  3. In a pan add the ginger garlic (or ginger garlic paste), onion and green chillie Fry until aromat.
  4. Add the rest of the spices with the chopped tomatoe Cook until mushy.
  5. Tear the parathas into small piece Shred the fried chicken using a fork. Add these and the egg scramble to the pan with cooked veggie Sprinkle little water and cover the lid. Cook till all becomes soft.
  6. To this pan add the Soya sauce, ketchup and green chilli sauce. Mix well. add pepper.
  7. Garnish with coriander and fried curry leave Add the lime juice. Mix well. Serve hot chicken kothu paratha with cold onion raita.
