The Ingredients need to make Creamy Dreamy Fennel Soup:
  1. It’s 2 of fennel bulbs
  2. You need 1 of large onion, sliced
  3. You need 2 of medium sized potatoes
  4. You need 750 mls of vegetable stock
  5. It’s 1/8 tsp of white pepper
  6. It’s of Salt and ground black pepper
  7. It’s 1 tbsp of olive oil
Step to make Creamy Dreamy Fennel Soup:
  1. Prepare the fennel by taking off the tough outer leaves, removing the stems and cutting out the most woody part of the centre core. Then slice it.
  2. In a large saucepan, gently fry the onion in olive oil for 5 minutes until translucent. Then add the fennel and continue to cook gently for another 5 minute
  3. Add the potatoes, white pepper and stock to the pan. Bring the stock up to a gentle simmer, cover the pan with the lid then cook for 30-40 mins, or until the veg is really tender.
  4. Cool the soup down before blending. Then reheat and season to taste with a good twist of salt and black pepper.
