The Ingredients needed to make Family favourite Christmas EggNog:
- Prepare 1400 ml of whole milk
- Prepare 600 ml of heavy or double cream
- It’s 2 of Vanilla bean pods split with seeds removed
- Prepare 3/4 piece of freshly grated nutmeg
- You need 3 of cinnamon sticks
- It’s 350 ml of vanilla spiced rum
- Prepare 7 of large eggs
- It’s 200 g of granulated sugar
Step to make Family favourite Christmas EggNog:
- Combine milk, cream, nutmeg, cinnamon sticks, and vanilla seeds and the pods into a large saucepan. Bring to the boil slowly then remove from the heat
- Whisk the egg yolks and sugar together until thick ribons form, then slowly add and whish into the milk mixture
- Add the Rum and continue slowly whisking with a hand whisk. Rum can be substitued for brandy.
- Allow to steep over night in the fridge
- Sieve out the mixture removing the cinnamon and vanilla pods
- Whisk egg whites until soft peaks form. Fold into the milk mixture and serve in christmasy glasses or mugs
- Garnish with freshly grated nutmeg and a cinnamon stick, with a mini gingerbread man at the side to dip in )

- If heating through serve before allowing to steep and do not add the egg white Do not reheat
- Also goes well with a little gingerbread
