The Ingredients needed to make Kuttanadan Beef Roast / Kerala Beef Roast:
  1. It’s of For making masala paste
  2. It’s 1 of big Onion
  3. You need 3 cloves of garlic crushed
  4. Prepare 1 of thsp ginger crushed
  5. Prepare 2 of green chillies
  6. It’s 1 tbsp of coriander powder
  7. You need 3/4 tbsp of chilli powder
  8. You need 1/4 tbsp of turmeric powder
  9. Prepare 1 tbsp of meat masala
  10. You need 1 tsp of garam masala
  11. Prepare 1/4 tsp of fennel powder
  12. You need as per taste of Salt
  13. It’s 2 tsp of Vinegar
  14. You need 4 tbsp of coconut oil
  15. Prepare of For making roast
  16. Prepare 3/4 of kgs Beef (cubes)
  17. It’s 20-25 of chopped shallots
  18. It’s 3 cloves of garlic chopped
  19. You need 1 of small piece of ginger chopped
  20. Prepare as required of Curry leaves handful / plenty
  21. Prepare 2 tbsp of Coconut pieces/ thenga kothu
  22. You need 1 tbsp of pepper powder or according to ones spice level
Step to make Kuttanadan Beef Roast / Kerala Beef Roast:
  1. Heat oil in a pan and add chopped onions,crushed ginger,garlic,curry leaves,green chilled,salt.
  2. Saute untill the onions turn light golden brown.
  3. Add all the powders one by one and vinegar and saute in low flame untill you dont smell the raw flavours of the powder
  4. Let it cool and grind this into a fine paste.
  5. In a pressure cooker, pour in this prepared masala paste along with beef piece And pressure cook according to the doneness of choice.
  6. Now to making Roast in a large skillet heat 2tbsp of coconut oil and add shallots,chopped ginger garlic,curry leaves,slit green chillies and saute untill it turns slight golden brown
  7. Add beef masala to this and roast until it turns nearly dark brown to black color. Add plenty of curry leaves and pepper while roasting.
  8. Serve it hot with malabar parotta.
