The Ingredients needed to make Easter Jaffa Cupcakes:
- Prepare 150 gms of Butter -
- You need 3 of Eggs -
- You need 3/4 cup of Caster Sugar -
- You need 1 tsp of Vanilla Essence -
- Prepare 2 of navel oranges Zest of
- It’s 2 of navel oranges Juice of
- It’s 1 1/2 cups of Self-rising flour -
- Prepare 1/4 cup of Rice Flour -
- Prepare of Icing
- You need 50 gms of Butter -
- You need 1 cup of Icing sugar -
- You need of orange Grated zest of an
- You need 1 of navel orange Juice of
Step to make Easter Jaffa Cupcakes:
- Preheat the oven to 180C
- Cream the butter, caster sugar and vanilla until it is soft and ribbon like. Stir in the orange zest and add the eggs one at a time. Add the flour, rice flour and add the orange juice and mix well
- Spoon the batter into the muffin pan and bake for 20mins or until the cup cakes are done. Allow to cool on a wire rack while you make the icing
- For the icing, beat the butter, icing sugar, orange zest and juice until soft and fluffy. Using a icing bag with a star tip draw a circle on top of each cupcake to create a nest and decorate with three or more easter eggs
