The Ingredients need to make Mango Cake:
  1. Prepare 4 of large eggs
  2. Prepare 1 cup of sugar
  3. Prepare 1 cup of flour
  4. You need 1 of large mango
  5. You need 40 g of olive oil
  6. It’s 1 tsp of salt
  7. It’s 1 tsp of vanilla essence
  8. It’s 1 tsp of mango essence
  9. It’s of juice of 1 lemon
  10. You need of zest of 1 lemon
  11. You need 1/2 cup of chopped hazelnuts
Step to make Mango Cake:
  1. Separate the egg whites and use a mixer to whisk them until they become fluffy and form soft peak
  2. Gradually add the sugar, then fold in the egg yolks gently.
  3. Sift the flour and mix it in gradually.
  4. Roughly chop the mango and blend in a blender to form a puree, then add it to your bowl.
  5. Add all the remaining ingredients and mix well, then pour into an oiled cake pan.
  6. Preheat oven to 180°C and bake the cake for 40-50 minutes or until fully cooked.
  7. Allow to cool outside oven for atleast 15 minute garnish with whipped cream and roasted hazelnut
