The Ingredients needed to make Greek Pasta Salad (Version 1):
  1. It’s of Dressing
  2. Prepare 2 Tbsp of Dijon Mustard
  3. Prepare 1 of Lemon (Juice)
  4. Prepare 1/2 Cup of Red Wine Vinegar
  5. You need 1/2-2/3 Cup of Olive Oil
  6. You need 4 Cloves of Garlic (Minced)
  7. It’s 6 Tbsp of Fresh Parsley (Chopped)
  8. You need 3-4 tsp of Dried Oregano
  9. Prepare of Salt (To Taste)
  10. Prepare of Pepper (To Taste)
  11. You need 1 tsp of Sugar (Optional)
  12. You need of Salad
  13. Prepare 1 lb of Rotini Pasta
  14. It’s 8 oz of Feta Cheese
  15. It’s 2 (6 oz.) of Cans Large Black Olives (Halved or Sliced)
  16. You need 1 Cup of Carrots (Julienned)
  17. You need 1-2 Cup of Roma Tomatoes (Diced)
  18. It’s 1 Cup of Broccoli Florets (Cut in small pieces)(Blanched 2 Mins)
  19. Prepare 1 Cup of Cauliflower Florets (Cut in small pieces)(Blanched 2 Mins)
  20. Prepare 1/2 Cup of Freshly Grated Parmesan (Optional)
Step to make Greek Pasta Salad (Version 1):
  1. Prepare Pasta according to package direction Shock or Rinse in Cold Water to stop cooking. Set aside.
  2. Mix all Dressing Ingredients in a medium bowl, except the Olive Oil. Pour Olive Oil in while stirring constantly, until consistency is right. Set aside.
  3. Prepare and Cut all Vegetable When cutting the Tomatoes, remember to scoop out the seeds and juice, before dicing. Bring a Large Pot of Salted Water to a boil. Add Broccoli and Cauliflower Floret Cook for Two Minute Strain and Shock in Cold Drain and Set Aside.
  4. Pour Dressing in a Large Mixing Bowl. Add all Ingredients except Pasta. Stir. Add Pasta. Fold all Ingredients together. Taste for seasoning. If using Freshly Grated Parmesan, add it now. Mix everything again.
  5. Cover and Refrigerate for at least 1 Hour. Best if chilled for Several Hour Enjoy!
