The Ingredients needed to make One Pan Mexican Quinoa:

  2. You need 1 of lime, juice from
  3. You need 1 of jalapeño, minced
  4. It’s 1 of avocado, diced
  5. Prepare 2 tbsp of cilantro leaves, chopped
  6. You need 1 tbsp of olive oil
  7. You need 2 clove of garlic, minced
  8. Prepare 1 tsp of chili powder
  9. You need 1/2 tsp of ground cumin

  11. Prepare 1 cup of vegetable broth
  12. You need 1 cup of quinoa
  13. You need 1 can of fire-roasted diced tomatoes
  14. You need 1 can of sweet corn, 15oz (drained and rinsed)
  15. Prepare 1 can of black beans, 15oz (drained and rinsed)
Step to make One Pan Mexican Quinoa:
  1. Mince the two garlic cloves and jalapeño. Mix dry spices in a bowl (1 tsp Chili, 0.5 tsp Cumin)
  2. Heat olive oil in large skillet over medium high heat.
  3. Add minced garlic and jalapeño. Stir for one minute or until fragrant.
  4. Add broth (1cup), then quinoa (1cup), beans (drained), tomatoes, corn (drained), spices mix (salt and pepper to taste).
  5. Boil. C Reduce heat and let simmer until quinoa is cooked through (about 20 mins).
  6. Stir in the diced avocado and cilantro, squeeze half a lime over each bowl.
  7. Serve immediately, leave salt and pepper out to taste.
