The Ingredients need to make Paleo Cheese-less /Crust-less Quiche:
  1. You need of cheese less / crust less mini quiche
  2. You need 4 large of eggs
  3. Prepare 2/3 cup of coconut milk
  4. It’s 1 1/4 tsp of salt
  5. It’s 1/2 tsp of black pepper
  6. Prepare 1 dash of nutmeg
  7. Prepare 1 dash of cayenne
  8. Prepare 3 medium of mushrooms (I like baby bellas) sliced
  9. Prepare 1 1/2 cup of chopped fresh spinach
  10. You need 1/2 of onion diced
  11. Prepare 1 clove of garlic curshed and minced
Step to make Paleo Cheese-less /Crust-less Quiche:
  1. Preheat oven to 350
  2. Saute onions, garlic, and mushrooms until slightly browned.
  3. Add fresh spinach to saute pan. Let spinach completely wilt.
  4. Let sauted veggies cool.
  5. In a bowl mix eggs, coconut milk, and seasonings until well blended.
  6. In a non-stick muffin tin place sauted veggies in the bottom of each well.
  7. Using a 1/4c. Measuring cup pour the egg mixture over the sauted veggie Fill each cup no more that 3/4 to the top.
  8. Bake for 20 -25 min or until fluffy and lightly golden brown on top.
  9. Cool and enjoy!! )
