The Ingredients need to make Poke Bowl:
- You need of For sushi rice
- Prepare 2 cups of cooked Nishiki brand short grain rice
- You need 1/2 cup of rice vinegar
- It’s 2 tablespoons of sugar
- Prepare 2 tablespoons of salt
- You need of For salmon
- Prepare 1/4 cup of soy sauce
- It’s 1 tablespoon of mirin
- You need 2 teaspoons of sesame oil
- Prepare 2 teaspoons of tobanjan
- It’s 1 pound of sushi grade raw or cooked salmon or tuna diced
- Prepare of For spicy mayo
- It’s 1/2 cup of kewpie Japanese mayo
- Prepare 1 tablespoon of tobanjan
- Prepare 1 tablespoon of lemon juice
- You need of Toppings
- It’s 1 of cucumber peeled and diced
- You need of Pickled ginger
- You need of Fried tempura bits
- It’s of Scallions
- Prepare of Avocado
Step to make Poke Bowl:
- Combine vinegar, salt, and sugar in small pot and heat over low heat until salt and sugar dissolve. Pour into rice and mix to combine
- Mix salmon marinade ingredients and pour over diced salmon. Mix to combine
- To make spicy mayo, add tobanjan and lemon juice to mayo and stir to combine
- To serve, fill bottom of bowl with sushi rice, top with marinated salmon, spicy mayo, and toppings
