The Ingredients need to make Marks Chicken Chorizo Jumbalaya:
- Prepare 1 tbsp of olive oil
- You need 2 of chicken breasts, chopped
- It’s 1 of onion, diced
- Prepare 1 of red pepper, thinly sliced
- You need 2 of garlic cloves, crushed
- You need 75 grams of chorizo, sliced
- Prepare 1 tbsp of Cajun seasoning
- Prepare 280 grams of long grain rice
- Prepare 400 grams of can plum tomatoes
- It’s 500 ml of chicken stock
- It’s 1 cup of frozen peas corn
- It’s 1 of green pepper
- You need 1 pinch of chilli flakes
Step to make Marks Chicken Chorizo Jumbalaya:
- Heat the oil in a large frying pan with a lid and brown the chicken for 5-8 mins until golden. Remove and set aside.
- Tip in the onion and cook for 3-4 mins until soft. Then add the pepper, garlic, chorizo and Cajun seasoning, and cook for 5 mins more.
- Stir the chicken back in with the rice, add the tomatoes and stock.
- Cover and simmer for 20-25 mins until the rice is tender.
