- It’s 1 (4 oz) of can green chiles
- You need 2.5 lb of chuck roast
- You need 1 of large onion, cut into 8 wedges
- Prepare 2-3 of bell peppers, cut into strips
- You need 1 tbsp of cumin
- You need 2 tsp of oregano
- It’s 1 tsp of garlic powder
- Prepare 1 of lime, juiced
- Prepare to taste of salt pepper
Step to make Slow Cooker Braised Beef and Peppers:
- Combine tomatoes, chiles, and spices in a crock pot and stir to combine. Add a couple big pinches of salt pepper.
- Layer onions and bell peppers on top of tomato mixture.
- Top onions and peppers with roast and season with salt pepper (Im certain you could use whatever cut of beef you like or have on hand.)
- Cook on high for 4-5 hours or low for 7-8 hour Once the meat is tender, shred it up, return to the crock pot and finish with the juice of a lime, adding salt and pepper if needed. Serve with avocado, sour cream, rice, tortillas, whatever you like.
