1. Remove the eggplant stems and chop into chunk
2. Drain the oil from the canned (Open the lid of the can a little and drain it out slowly)
3. Put the tuna and eggplant in a pan and stir-fry on medium heat.

5. Cover the pan with a lid and cook over low heat. It shouldnt take long.
6. Once cooked, turn the heat to high and boil.
